I'm a vegetarian. Any pasta dish will do. You can also get the Boca or Morning Star Burgers. Here's one of my family favorites.
Ziti with Gorgonzola and Tomatoes
8 oz. Ziti Pasta
1 cup Gorgonzola Cheese
4 Tbsp. Olive oil
4 Tbsp. Pine Nuts
1/2 c. chopped fresh Basil
1 clove of garlic
4 Roma Tomatoes
Cook Pasta. While pasta cooks, soften garlic in olive oil. Add pine nut and brown them over low heat. Approx. 3 mins.
Cut Roma Tomatoes into Bite size pieces
Add nuts, garlic and olive oil to tomatoes in large bowl. Mix.
Add pasta to mixture and Gorgonzola cheese. Garnish with Basil.
This goes great with a loaf of crunch bread and a big Caesar salad.

Well i am a vegetarian also. Don't go thinking that all we vegetarians eat is salad. I personaly love salad and i would pick it over like any meal. but we also eat a lot of other stuff! How about serving your date some vegetables? A good dinner would be a baked potato with butter on top, corn on the cop,cooked broccoli and how about some vegetarian baked beans.. sounds gross but not really! BUT WAIT.... I HAVE ANOTHER GOOD IDEA THAT YOU SHOULD TRY.. DONT STOP REEADING YETT. You should try serving things like pasta or riggitoni with maranara sauce and melted cheese on top. Now if ur date is a STRICT vegetarian then i suggest that u dont serve them anything with milk, cheese, or eggs in it. If u are going for the italiano theme then u should have something like pasta, macaroni, spaghetti.. and such. Another basic things that us vegetarians eat in different forms is BREAD! If you are going for the italian then it would be great to make garlic bread. All you need to make garlic bread is get long rolls and cut them in half.. then add the oil,sauce, and garlic.. if you are woried about having bad breath for your date.. then how about warm rolls? Heat them up in the oven..toaster . I bet your date will think you are a good cook right?

How about some ...Egg Plant Parmigan?
Wash, slice, egg plant....dip in mixture of egg and milk, then bread with Italian seasoned breadcrumbs. Fry in small amt. of olive oil until browned on both sides....After eggplant is browned, remove from frying pan and put into baking pan...top with large jar of spaghetti sauce (I like Prego) Bake for about 30-45 minutes (Until eggplant is tender, and the sauce heated thoroughly at 350 in a pre-heated oven....just before serving top with slice (or shredded) mozzarella cheese... put back in oven for couple of minutes to melt cheese.....You could make some kind of pasta (thin spaghetti, rigatoni, or angel hair pasta) to be served along with this. Top pasta with sauce left in the pan...If desired sprinkle with parmesan cheese....Add a small green salad and italian bread or breadsticks and yum...I'm getting hungry! If all this is too difficult for you....go to a good chinese restaurant and order several vegetable dishes with rice for carry out...(make sure to get a few fortune cookies) LOL

First, determine the theme of the dinner. Let's say you would like to cook some delicious Mexican food...you could easily do it for a veggie/vegan. It would work like this: Buy some hard tofu at your market and whatever you will put in the Mexican dinner. Buy the spices/mixes and the veggies, rice and beans you would use for any Mexican dinner. Instead of using beef or chicken, for example, for fajitas or for tacos or enchiladas, you would use the tofu. Cut up the tofu into small dices...about 1/4 inch each. Use about a cup of tofu for each person. Marinade the tofu for 24 hours in this mix: 1/4 teaspoon of each: comino, paprika, garlic and onion powders. Add a dash each of coriander and clove. This will be a dry marinade so be sure to put it in an airtight container in your refrigerator.
On the day of the dinner, cook the beans a la Mexicana...you could cook some dry pinto beans until they are soft...about 2 hours' worth and then fry them in diced onions. Add some comino and garlic and sea salt to taste. Cook some brown rice and add just a touch of garlic and sea salt. Shred some lettuce, some tomatoes and some green peppers. Set these aside. Now get out the dry marinaded tofu. Cook this in a saucepan oiled with 1 Tablespoon of peanut oil. Simmer the tofu until the mixture has a uniform lovely orange-red color. Keep warm. Cook your tacos (unless you have bought the ready-made kind) in oil if you want them crispy or simply on an iron skillet if you want soft tacos. Add the tofu and shredded veggies to the tacos with salsa. If you want to bake enchiladas, for example you would wrap the tofu and veggies in soft corn tortillas oiled to be flexible. You would line an oiled bake pan with the enchiladas and cover with soy cheese. Bake, covered with aluminum foil for 30 minutes at 375 F.
For dessert you could have diced fruit (pineapples, apples, watermelons, kiwi fruit, honeydew melons and oranges) mixed with cayenne pepper. This is delicious and surprisingly sweet/hot!
This dinner would be Tex-Mex but you could spice up tofu any way you would like to have a delicious dinner for your veggie friend! Good luck!

Ask your friend if she eats dairy and eggs-some vegetarians don't. If she does,then a pasta primavera with cheese, a veggie lasagna or a Mexican dish made with beans e.g. burritos,tostadas,enchiladas would be good along with a nice salad :). If not, beans and cornbread or a tofu stirfry.

You can always give your friend some tofu and soybeans. This crap's always a big hit with vegetarians. I'm not sure which of these would be the main course, though.

Mexican chilli without meat with beans or tacos or spagetti just omit the meat for beans or nutmeat or a nice vegetarian lasagna with eggplant tomato spinach ricotta etc

I'd make some spinach and some carrots and for the main portion that would ordinarily have meat you could substitute a big, juicy slice of watermelon. Good luck!
