Seafood Gumbo

3 cups onions -- diced
2 cups green bell pepper -- diced
6 medium tomatoes -- diced
1 cup tomato puree
1 1/2 teaspoons thyme
1 1/2 tablespoons minced garlic
4 bay leaves
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1 1/2 pounds okra -- chopped
2 quarts seafood stock
2 pounds shrimp -- cook, peel, devein
24 freshly shucked oysters -- drained
1 pound lump crabmeat -- shells removed
2 tablespoons filé powder
1.) Combine onions, peppers, tomatoes, and tomato purée in a heavy 8 quart
pot or Dutch oven. Cook on medium heat for 10 minutes, stirring occasionally.
2.) Add thyme, garlic, bay leaves, salt, and pepper, blend well, and simmer
for 10 minutes.
3.) Add okra. When okra is bright in color and is cooked but still crisp,
add stock. Bring to a rapid, rolling boil, then lower heat. Add shrip,
oysters, and crabmeat and simmer for 15 minutes longer.
4.) Combine filé powder with 1 cup of the soup. Remove gumbo from heat and
stir in the filé-soup mixture. Correct seasoning to taste.

Ingredients:-
-5 qts. water
-2 bell peppers, chopped
-2 c. celery, chopped
-6 (8 oz.) cans tomato sauce
-3 tbsp. black pepper
-8 slices bacon, cut fine
-3 c. green onions, chopped
-3 lbs. shrimp, crabmeat or both
-1 c. flour
-2 lg. onions, chopped
-4 tbsp. garlic, chopped
-3 tbsp. salt
-3 tbsp. red pepper
-3/4 c. parsley, chopped
-10 pods fresh cut okra
-Vegetable oil
Method:-
1) Make a roux stirring vegetable oil and flour until well browned. 2) Add 2 cups water and stir.
3) Add 3 more cups water and all other ingredients.
4) Let cook until vegetables are done.
5) Add seafood 15 minutes before gumbo is ready and let cook. 6) Add more water if necessary.

gumbo is eaten as an appetizer or meal. not something quite is going with it yet a roll or cornbread notwithstanding some southerners LOVE a scoop of potato salad in the direction of their gumbo. possibly some crusy french bread? i might probable deliver cider.

crab legs 1lb
white rice
jalapenos at least 6
green peppers and either chicken or pork for variety and for spiciness i would add one red savina pepper.
