the best thing to do is to eat bread since it'll soak up the oils that make things spicy. if you really need to drink something..drink milk. it contains enzymes that will cut the heat but it's best not to drink something because it'll just spread out the oils throughout your mouth. whatever you do don't drink water!! it does nothing except spread out the heat.

a tbls. of sugar, a cup of milk or a slice of bread. but never ever WATER. it actually intensifies the burn. because you've rinsed off the other flavors and left the Heat of the seed. in hotsauce or anything spicy the seeds of the peppers are where the heat is. so never drink water.

When I was in Malaysia I ordered some Tom Yum soup and it was so so so hot my mouth was on fire and believe me I was suffering.
The Malaysians thought this was funny and I suppose in a way it was and I could laugh at myself.
They weren't totally heartless and gave me sugar to eat and that got rid of the heat. It worked for me.

Typical sides served with hot food to kill the burn are, sour cream with Mexican, yogurt with Indian. Both are dairy products the fat molecules coat the linings of your mouth insulating it from the capsaicin.

My family swears by butter. After you eat something too spicy for you, eat a small amount of butter. The advantage to this over other remedies is that, at most resturants, butter is easily available (perhaps even already at your table).

Hope that helps,
