I need a good instructional website (preferably with pics or video) or tips :)

Here is a way to learn and get an idea of how it works. It's kind of like training wheels for chopstick. This is how I tough my kids how to use them.
Wrap an elastic around the top ends of both of the chopsticks. Now put a small folded up piece of paper in between the sticks and up at the to near the elastics. The paper and elastics make them pincher style. Practise and before you know it you'll get the gist of it and you can take the elastics off. You'll be a pro in no time.

Chinese and Japanese have different table manners.

Personally prefer to sharpen one end and skewer the food.
