It is easy for me to come up with antipasto, pasta and dessert courses - but for meat and for alot of people I always have a hard time. Especially because it is expensive. Any ideas for the meat course at a large family gathering?

Spiral Ham, Roast Beef, Turkey would be a good choice......How many People?

BARBECUED SPARE RIBS:
3 to 4 lbs. Ribs (country-style)
black pepper (season to taste)
garlic powder (season to taste)
1 lemon (sliced)
1 large onion (sliced)
1 cup ketchup
1/3 cup Worcestershire Sauce
1 teaspoon chili powder
1 teaspoon salt
2 dashes Tabasco Sauce
2 cups water
Place ribs in a large shallow roasting pan, meaty side up. (mine measures 14 x 10 1/2) Season meat with pepper and garlic powder. On each piece place a slice of unpeeled lemon, a slice of onion. Roast in a very hot oven (450 degrees) for 30 minutes.
Drain grease from meat pan. Combine remaining ingredients in saucepan and bring to a boil and pour over ribs. Continue baking in moderate oven
(350 degrees) until tender, about 45 minutes to an hour. Baste ribs with sauce every 15 minutes. If sauce gets thick, add more water.

I don't eat meat, however I do eat fish. Par boil the following after cutting them into pieces which are roughly the same size. Potatoes, carrots, turnip, onions, parsnips and courgettes.Place the vegetables onto a large roasting tin, the tin must contain hot oil and then cook the veg in a hot oven until the vegetables are brown. I then add veggie bacon, however you could use sausages. Scatter grated mozzarella cheese over this then sprinkle on Worchester sauce, return to the oven until brown and crisp. A very lazy meal. Buy some Auntie Bessie's mashed potato and a tin of ratatouille. Put the ratatouille in a casserole and put the pieces of mashed potato on top, sprinkle cheese on later and after you have been able spread the hot potato with a fork. Have this with any meat or fish or your choice. For ease and economy buy frozen veg and cook them all in the same pan. After the veg is cooked, strain and mix with butter and humus. Again you can have meat or fish with this. If you like pasta you will LOVE fresh egg noodles. Do a stir fry and have this with egg noodles and prawns. For a special treat buy the very large prawns from Aldi.

Honey Ham with Mandarin Oranges

1 (4-pound) fully cooked, boneless ham
1/2 cup honey
2 tablespoons Dijon mustard
1/4 teaspoon ground cloves
1 (11-ounce) can Mandarin oranges in light syrup

Preheat oven to 325ºF.

If ham has skin, peel it away using a sharp knife and discard, leaving a thin (1/8-inch) layer of fat on the surface. Score remaining fat with a sharp knife by cutting diagonal lines, about 1/8-inch deep, from 1 side to the other, criss-crossing cuts to form diamond shapes on the surface. Transfer ham to a foil-lined roasting pan and set aside.

Whisk together honey, mustard and cloves. Brush mixture all over ham. Pour the Mandarin oranges with liquid from can over the ham.

Bake 1 hour (14 minutes per pound), basting every 15 minutes with pan juices.

Let stand 10 to 15 minutes before slicing into thin slices.

here are a few ideas for you to consider ...
are you any good with meat loaf ?
Basic Meat loaf in a crockpot ...


* 2 pounds of lean hamburger
* 2 eggs
* 2 slices bread, in small cubes
* Milk
* Ketchup
* Salt and pepper
* 1 small onion, chopped

PREPARATION:
Beat eggs - add bread cubes. Add enough milk to moisten all. Add hamburger....squish all together with your hands. Season to taste. Place in slow cooker/Crock Pot....shape to fit, flatten. Pour catsup on top (enough to cover completely) Crock on low all day 8 - 12 hours.

Notes: I've also used crushed crackers instead of bread, and salsa instead of the ketchup.

Try bakeing them in muffin tins or mini-loaf pans for individual servings. ( this is great IF you have the time to do it ahead )

Meat balls ....
Stuffed bell peppers
Chicken and dumplings ...goes a long ways ... so doesnt chicken and noodles ( make your own noodles ? )

CURRIED SAUSAGES.


2 tsp oil
8 beef sausages
1 onion. chopped
1 tsp curry powder
1 Tbsp flour
3/4 cup beef stock
1 Tbsp relish or chutney (optional)
salt to taste

Heat oil in a frying pan. Cook sausages for 10 min or until golden on all sides
and cooked through. Remove from pan and pour off all but 2 Tbsp fat. Add onions
and cook until clear. Stir in curry powder and cook for 30 seconds. Stir in
flour and cook for 30 seconds. Gradually add stock, stirring constantly until
mixture boils. Reduce heat and add relish (I've never added it but it might be
nice) Slice sausages into bite size pieces. Add to mixture. Cook a further 5
minutes to heat through. Serve with rice.
this can be doubled or tripled

Sounds like you're going Italian... how about making meatballs? you can make them small, so 3-4 of them will seem ample. And it's only ground meat (beef+ veal + pork) adn spices.

If you can find a pork loin on sale, that will usually go pretty far as well. Slice thin.

If you've got the skills, a flattened, stuffed, rolled tied and roasted whole pork loin will yield 25 finger width[ mine]slices. (See if there's a butcher in the family to handle that loin for you) Or you can just make the whole loin.
you can also do chicken breasts stuffed w/spinach and ricotta
and when all else fails there's always chicken cacciatore [sp ?]

Leg of pork. Remove the skin, make slits all over it (leg of pork) and put in slithers of fresh garlic. Roast the skin separately for crackling. Serve this with your favourite veggies and don't forget the apple sauce on the side.

How about a simple roast turkey? With lots of lemon, and studded with garlic? And then a side of homemade stuffing?

a pot roast would be nice,Cornish hen with wild rice a honey gaze ham have fun with the dinner i love family gatherings but they are a lot of work

i wish someone would just cook for me, all that food sounds good and my gf cant cook, i wont even let her in the kitchen anymore, honestly how bakes a cake on high, it was burnt on the outside and gooey on the inside.... she can make mac and cheese though...lol....yummy :S
