<< Baked Ricotta Mushrooms >>>>>> (makes ten)
10 large mushroom (stems removed)
1 tablespoon grated Parmesan cheese
1 tablespoon dried breadcrumbs (whole wheat bread or oat bread)
Ricotta and herbs filling
1/2 cup reduced-fat ricotta cheese
3 sun-dried tomatoes, soaked in warm water until soft, chopped
1 tablespoon finely diced red onion
1 tablespoon chopped fresh basil
1 tablespoon snipped fresh chives
1 teaspoon lemon juice
freshly ground black pepper
1) Preheat oven to 180 degree C / 360 degree F/ Gas 4. Line a baking tray with nonstick baking paper. Set aside.
2) To make filling, place ricotta cheese, tomatoes, onion, basil, chives, lemon juice and black pepper to taste in a bowl. Mix to combine.
3) Spoon filling into mushrooms. Place on prepared baking tray. Combine Parmesan cheese and breadcrumbs. Sprinkle over mushrooms. Bake for 10-15 minutes or until filling is set and top golden.

2 ripe firm pears, cored
lemon juice
1 red oak leaf lettuce or other red lettuce (coral or mignonette), leaves separated
1/3 cup unsalted walnut halves
2 tablespoons crumbled low-fat ricotta cheese
Red Wine Pear Dressing
1 canned or blanched fresh pear, with 1 tablespoon liquid reserved
2 tablespoons red wine vinegar
1 teaspoon freshly ground black pepper
1) To make dressing, place pear and liquid vinegar and black pepper in a blender. Puree.
2) Cut each pear into eight segments. Place in a bowl and add lemon juice. Toss to coat (this helps prevent the pears from browning).
3) Arrange lettuce on a serving platter. Top with pears. Drizzle with dressing. Scatter with walnuts and cheese.

1 Tofu (firm one, cut into big cubes)
200g Lettuce leaves (3 different kinds)
6 Cherry tomatoes (cut into half)
2 Lebanese cucumbers (sliced)
50 g toasted almond (chopped)
Dressing
2 tablespoon extra virgin olive oil
2 tablespoon rice vinegar
1/2 fresh lemon juice (squeezed)
1 tablespoon soy sauce
1.5 teaspoon sugar
1 tablespoon sesame oil
1) Put tofu on top of the green + tomato in to a salad bowl
2) Pour the dressing on the salad, sprinkle the almond on top

A really good one :
Baked Corn
INGREDIENTS:
2 cups whole kernel corn
1/4 cup chopped onion
1/4 cup green bell pepper, chopped
25 g margarine
2 tablespoons all-purpose flour
1 teaspoon salt
ground black pepper
3/4 cup milk
1 egg
1/3 cup cracker crumbs
1 tablespoon butter, melted ( = 15 g )
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, saute onion and green peppers in the margarine. Using a wooden spoon, stir flour, salt, pepper and milk into the sauteed mixture. Stir corn kernels and egg into the mixture before pouring the entire concoction into an ungreased medium-size casserole dish.
Combine cracker crumbs and melted butter in a small bowl. Pour the mixture over the casserole.
Bake in a preheated 350 degrees F (175 degrees C) oven for 30 to 35 minutes.

I like to stir fry drained canned garbanzo beans (chickpeas) which are precooked, with peeled and cooked potatoes and onions. I add a little curry and other flavorings I like (salt, pepper, garlic, boillion or onion soup mix) to taste. You can also get creative and try different vegies with that.
An alternative is to stir fry all the vegies and flavorings that you would for fajitas but use garbanzos instead of meat.

Hi,
I know a great potato soup! And it is easy.
(All amounts are approximate)
Pack of frozen shredded hashbrowns (not the kind that are pattied--the frozen shredded ones in the frozen french fry section of the supermarket)
Three 16 oz. cans of vegetable broth or chicken broth
Two pints of heavy whipping cream
1/2 of a medium onion, chopped (optional)
Chopped green onion (optional)
Shredded cheddar cheese (optional)
Imitation bacon bits, or real bacon bits (optional)
Salt and white pepper to taste
Mix all except green onion, bacon bits, and cheddar in a large soup pot. Bring to boil, then simmer at med-low for about 45 mins to an hour. Top with green onion, bacon bits, and cheddar cheese. Serve with yeast rolls or panini bread.
This is very flavorful and very filling! Enjoy!

Here is more of a method rather than a recipe:
saute some greens (like spinach, or broccoli, or whatever you like) with olive oil, salt to taste maybe some garlic.
Put it in a big bowl and mix in a few eggs and whatever type of cheese you like
Poor in a frozen ready-made pie crust, and bake according to directions.

lasagna but substitute nut meat for the red meat...
especially good moussaka using walnut meat.....
roast your favorite veggies...spread on a pre-made pizza dough...heat through , sprinkle with cheese(s)
use at least 3 if not 5 root veggies [garlic, onion, fennel, carrots, celery added to taste]..cook, puree, add herbs and spices....makes a hearty soup...top with sour cream/yogurt

Vegi Sandwiches. Lettuce of your choice, cucumber, avacado, olives, onion and on and on... :) yum now im hungry.
Steamed rice of your choice. Cooked zucchini, onion, mushroom, tomato, bel pepper, and cook it with some broth, and tomato paste or ?? whatever you like. Then eat it over rice..
Trader Joes has this premade frozen bag of Fire Roasted with balsamic butter sauce Vegitables.. IT IS SOOOO GOOD!

take butter in a pan heat to melt on low flame add finely cut tomatoes and onion pcs along with some garlic pcs simmer it till cooked add spices u feel like then add mashed potatoes and half boiled (previously) cauliflower pcs and mashed again everthing add salt to taste and little water to make it a semi solid gravy peel a lime on it and some coriander leaves to decorate to taste.. put a spoon of butter and eat it along with bread while hot ..name of item pav- bhaji and indian dish...
