Silly question really...it all depends on what your cooking and what elements you want in your dish:

-Ginger flavor (muted)
-Ginger flavor (Raw & sharp)
-Garlic (aromatic savory)
-Garlic (aromatic & sweet-when it get's carmelized)

Garlic sound great but so does ginger. Go with the garlic and next time try the ginger. Good luck.

Ginger and garlic with sesame oil make a great marinade for something like flank steak. Have the cake and eat it.

I like both. Make a stir fry with fresh brussel sprouts, red bell peppers, green onion, soy sauce, garlic, and ginger. Wonderful!
I eat the leftovers cold with sesame seeds sprinkled on top.
