they are actually made of rice but made into noodles. Tha't why there called rice noodles. no joke!

So rice noodles are made from rice, they are usually clear after cooking, you cook them just like normal noodles, unless you have the super-skinny glass noodles (they are usually quick fried).

These rice noodles are usually good in Chinese style soups, but they are perfect for those of us who are wheat intolerant!
You can find them in different sizes and shapes/lengths at your local Chinese or Asian market.

As you might know (???), all pasta is made of flour and water.

Italian pasta is made of wheat flour, while rice noodles are the asian version of pasta, made with rice flour (ground up rice).
Due to the different consistancy the pasta looks different than wheat-pasta, rice noodles are very white, and when cooked, they are transparent (see-through).

Long, very thin and nearly transparent noodles you can usually find in the asian section of the grocery department. I like 'em.

Yes, all the above; plus quick to make (only a couple of minutes in boiling water) and you can add all sorts of meats,fish, poultry plus veggies and they absorb the flavors; I also like the with just a bit of butter and salt/pepper....
