having a friend over for the weekend and were going to watch movies.....need a good idea for dinner...no take out and no pizza....chinese or thai is okay but i prefer to make my own...anybody got any ideas?

Shepard's Pie is always a great dinner.

To make a medium size pot all you need is:

1 lbs ground hamburger
8 large potatoes (or instant mashed potatoes)
2 cups shredded Cheddar cheese
1 can creamed corn

Peel and quarter potatoes, boil for mashed potatoes(or use instant.)

To make homemade mashed potatoes I always use
1 cup of sour cream
1/4 cup butter,
1/4 cup milk

When potatoes are cooked (do not over cook or they may come out watery) add butter, sour cream, milk, seasonings, and cheese and mash until smooth.

Brown the hamburger meat with salt and pepper. (you can do this while the potatoes are boiling)

Preheat oven to 350 or 400 degrees

When both are complete, put meat in the pot covering bottom, layer can of creamed corn over meat, layer mashed potatoes on top and top with a little bit of shredded cheese. Cover and bake for 30 min or until hot all the way through.

If using instant potatoes, you can still use sour cream and seasonings to dress them up a bit.

I can't STAND the taste of already made spaghetti sauce. It is fairly simple to make.

I use:
2 tbs. of cooking oil
1 large white onion ( chopped)
1 tsp (or so) of minced garlic

2 cans of stewed tomatoes (Italian Recipe)
1 can of crushed tomatoes (Italian Recipe)
No matter what size can you use the porportions above

1 or 2 tbsp Italian Seasoning (has oregono, basil, parsely, etc)
Salt, and Pepper to taste.

First heat the oil in a med-large pot on MED. Once the oil is hot, add the onion and garlic and saute until onion is almost transparent. Add the rest of the ingredients and cook an med-low for at least an hour. All measurements are approx. (I don't usually use recipes.)

If you would like to add meat, simple brown ground beef in a different pan, and add to sauce.


1 box lasagna noodles
1 med size container of ricotta cheese
1/2 cup grated parmesean cheese
1 large block of mozerella cheese (grated)
2 eggs
2 tsp italian seasoning

Instructions:

After sauce is ready, boil lasagna noodles until tender.

Combine parmesean and ricotta cheese with the eggs, and italian seasoning.

Use a deep caserol dish, and spoon a small amount of sauce into the bottom of the dish. Place 1 layer of noodles, mozerella cheese, ricotta mix, and sauce. Repeat until dish is full. Top with mozerella cheese.

Cook in oven at 400 degrees for 1 hour covered with foil (or until heated completly through.) Remove foil and cook for an additional 15 min until cheese is golden brown.

Do not serve right away. Let set for about 15 min.

Here's a YUMMMY new, EASY recipe for you to try....you can add stuff like mushrooms, green onions, olives, tomatoes, etc. This is great hot, and then leftovers cold for breakfast or lunch the next day.....

IMPOSSIBLE CHEESEBURGER PIE

1 lb. hamburger
1 med. onion
1/2 tsp. salt
1 1/2 c. milk
3/4 c. Bisquick
3 eggs
1 c. shredded cheese (i ALWAYS use more!)

Brown hamburger and onions together, put in a greased 9"x9" pan. Sprinkle cheese over top of meat. Combine the milk, Bisquick, salt, and eggs together; (mix to smooth texture) pour over the hamburger & cheese. Bake at 350 degrees for 35-40 minutes or until knife inserted in middle comes out clean.


You can have a salad or green beans or celery sticks/cream cheese as a side and then ice cream for dessert!!

fried rice goes with all asian dishes so make that your main and work around that
dimsims-spring rolls -prawn toast
plum sauce-soy sauce-wasabi
even garlic/herb bread
all nice and easy to make and eat
if you drink wine-gerwitztraminer or muller thurgau-both whites

keep it light...sweet and sour fish...mashed potato....fresh fruit salard....there will be room for nibbles through out the evening.
