Any good fusion recipe ? I know mango goes well with prawns. What else ?

Mangos are the best not cooked.
However....I have made Mangos into jam. I followed a recipe for peach jam, but used mangos instead. It was awesome! I got many complements on it and even managed to sell some.

Mango Tango Salsa

Preparation: To pit a mango, place it stem side up with the narrow side facing you. Make a vertical slice starting at 1/4" to the right of the stem. Repeat on the other side. Lightly score the flesh of the mango into diamonds. Buckle the skin, pushing the flesh outward so that it resembles a porcupine. Slice off the cubes.
Ingredients:
3 ripe mangoes, pitted and cubed
Juice of one lime
1 tablespoon red onion, minced
1/4 cup fresh cilantro leaves
1/2 jalapeno pepper (optional), seeded and minced
Combine all ingredients. Let stand for 10 minutes. Toss before serving. Serves 6 as a side dish.
Serve with grilled fish, chicken or pork.


Mango Upside-Down Cake

2 cups ripe mangoes, sliced
2 tbsp. lemon juice
1 tbsp. butter
1/3 cup brown sugar
1/4 cup shortening
1/4 tsp. salt
3/4 cup sugar
1 egg
1/2 cup milk
1/2 cup milk
1-1/4 cups flour
2 tsp. baking powder

Pour lemon juice over mangoes and allow to stand 15 minutes. Melt butter in 8-inch pan or casserole. Add brown sugar and cover with a layer of mango slices. To prepare the cake batter: Cream the shortening, add the shortening, add the sugar and cream together, then add beaten egg. Sift dry ingredients and add alternately with milk. Pour over mangoes and bake 50 to 60 minutes at 375 degrees F. When cake is done, turn it out upside-down and serve while still warm. Serve with whipped cream or a lemon or lime sauce.

Mango Sherbet

1 envelope (1 tablespoon) unflavored gelatin
3 cups sieved mango puree
1/2 cup sugar
3 tablespoons lime juice

Sprinkle the gelatin on 1/3 cup cold water, then dissolve, stirring, over low heat. Cool. Mix mango puree, sugar, lime juice and gelatin. Chill until the mixture is syrupy. Beat until light and fluffy. Serve with whipped cream, or ice cream. Serves 6.

Mango makes a great chutney. Chop, add sugar, vinegar and mustard seeds and some water. Cook till the mango breaks down some and chill. Yum.

THAI STICKY RICE WITH MANGO DESSERT

Ingredients:-

-2 cups glutinous (sticky) rice, soaked in cold water for at least one hour and drained
-1 1/4 cups coconut milk, canned or freshly prepared
-pinch of salt
-2 tablespoons of sugar
-2 large ripe mangoes, peeled and sliced

Method:-

1) In a saucepan bring to a boil: rice, coconut milk, salt, sugar and 1 1/4 cup water. Stir.
2) Lower heat and simmer, uncovered, about 8-10 minutes until all the liquid is absorbed.
3) Remove from heat.
4) Cover and let stand 5 minutes.
5) Transfer rice to a steamer or double saucepan and steam 15-20 minutes over boiling water, until rice is cooked through.
6) Mold the cooked rice into individual ramekins or small cups lined with plastic wrap.
7) Cool to room temperature.
8) At serving time unmold onto a plate and top with mango or even strawberries.

You can try making Mango Salad with it. All you need are: Ingredients:
1-3 Mangoes cut into julline strips
1 teaspoon of Thai Fish Sauce
1-3 chillies cut into thin slices ( small ones are the best)
1-2 tablespoon of freshly squeezed Lime juice
1 tablespoon of ground oven roated peanuts till golden brown (removed skin)
1 jicama (cut into julliane stripes)-optional
1 carrot (cut into julliane stripes)-optional
Sugar to taste

Method:
Mix all the above ingredients in a large mixing bowl. Add extra lime juice or fish sauce (salty) .. according to individual preferences.

* Mango goes well with fish too.. (Steamed Tilapia Fillet in Mango Sauce ) in Banana Leaf :) Bon Appetit !!!! Yummm

Mango salsa is one of the most tasty uses of this fruit. Use chopped tomatoes, jicama, onion, jalapenos,cilantro and mangoes and use with chips or on seafood or chicken.

Mangos are also amazing in smoothies, Try using them with pineapple juice, a banana, and peaches.

My friend makes these really delicious wrapped sandwiches with mango. You mix some cream cheese with cilantro and spread it on a tortilla. Then put slices of mango and roasted red peppers on it. Roll it up and enjoy!

you will do injustice to the mango if you cook it, plus it will lose its natural flavor

so enjoy it ripe and sweet, particularly from cebu, the philippines

their mangoes are unbelievably sweet
