Well, some of those that answered obviously don't know what head cheese is. I learned to make it from my Grandmother and it is the best lunchmeat one could ever eat. It is difficult to find good headcheese in the stores, at least where I live it is, but there are a few that are ok.
Those that haven't tried it don't know what they are missing.
