what are the electronic component which convert pressue in to electrical signal and how it is displayed in digital value

There are many components that can be used to perform this function. Commercial pressure gauges usually use a bridge configuration of resistors deposited on a diaphragm. The two links I provide below give examples and descriptions of these.

The previous answers are also correct. Many materials and physical properties can produce a current or voltage change due to motion...piezo elements, resistance, electromagnetic coils, even capacitance, can be used to detect motion which can be made proportional to pressure by appropriate mechanical linkages.

They are usually called transducers but could as easily be called pressure gauges or strain gauges, even microphones. The conversion of the output voltage to a number that can then be displayed in a digital value is usually performed by an ADC ( Analogue to Digital Converter).
