As painful as it may be, you have to ask yourself why she feels that way. In all honesty (Be truthful) does she have a point? If she does, then make the changes you think are necessary.
However, if you're convinced that she's merely being defensive because she thinks nobody is good enough for her daughter, then there's really nothing you can do. Under these circumstances, the battle has to be fought by your fiance. She's HER mother; and SHE has to lay down the limits of how she expects you to be treated.
A word of warning...
If there's nothing wrong with you, and your mum-in-law to be is just being picky and defensive -- AND your fiance won't speak up to lay down acceptable limits -- then you're in trouble. You're obviously involved with someone who hasn't grown up yet and is still intimidated by her mother. You can expect a lot more friction in the future as Mum throws her weight around, and your wife does nothing to stop it.

When your mum-in-law to be thinks that you are a good-for-nothing moron, be calm and avoid any direct confrontations. Try to do things that would change her opinion of you.
Meanwhile, find out from your girlfriend why is her mother easily irritated so that you can work on them.
While you are dating your GF, have you neglected her mother? I mean, have you been nice to her, show that you are concern about her and what not. Maybe you should start doing so. Good Luck.

Unfortunately when you marry, you marry the whole family. So try to make peace or you may have a hard time ahead of you. Find out what the Mom likes in a man and try to put forh those traits, maturity, honesty, hard working, responsible, and trustworthy. She is after all just thinking of her daughters happiness, of course this is from a Mom's perspective too, since I am one. Being a Godly man is a plus too!

Boy, you have to be smart now. Don't forget, make her happy should be one of your ways to get your girl too. If you can't handle her, it's gonna put your girl in a difficult situation. It also will put pressure on your relationship too. Just try your best make her happy, yet let her know that you respect her not sucking it up to her. The game is on, Kid!!! You are smart. You'll figure it out.

Are you a good for nothing moron? I thought not. Try charming her with compliments. If that doesn't work, just always be respectful to her. Some people are not happy unless they are miserable. You will just have to accept it and see her as little as possible.

Very very carefully!! Keep in mind that you love your girl, not her mum. She is entitled to her own opinion, however twisted it may be. Does your girl know how strange you find her mother? Maybe having a talk with your girl will give you more insight on her mum. Good luck :)

you don't need to handle her, you love her daughter try to keep the piece and tell your girl lhow you feel
explain to her that when you see & think about the future it is her that you see, but will she able ot understand that you will not like to have a lot of contact with her mom
now remember I say you, not her because she is her mom you can't ask her not to have contact I am sure that in the future if her mom don't change her attitude about you her daugher will be the one to pull away
or you can try to talk to her mother and tell her you intent to make good with your life because of her daughter
