This is a Paula Dean recipe
2 cups peeled, cooked sweet potatoes
1 1/4 cups sugar
1/2 stick melted butter
2 eggs
1 teaspoon vanilla extract or 1 to 2 tablespoons bourbon
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1 cup milk
9-inch unbaked pie crust
3 egg whites
Preheat the oven to 350 degrees F.
For the filling, using an electric hand mixer, combine the potatoes, 1 cup of the sugar, the butter, eggs, vanilla, salt, and spices. Mix thoroughly. Add the milk and continue to mix. Pour the filling into the pie crust and bake for 35 to 45 minutes, or until a knife inserted in the center comes out clean. Place the pie on a rack and cool to room temperature before covering with meringue.
For the meringue, using an electric mixer, beat the egg whites until soft peaks form; beat in the remaining 1/4 cup sugar 1 tablespoon at a time. Continue beating until the sugar dissolves and the mixture is glossy and stiff, but not dry. With a rubber spatula, spoon the meringue onto the pie, forming peaks. Make sure the meringue touches the crust all around. Sprinkle with a pinch of granulated sugar. Bake for 10 to 12 minutes, or until delicately browned. Cool and serve.

This is my Mom's recipe for Sweet Potato Pie. It is so delicious.
The best sweet potato pie I've ever eaten.
2 eggs, slightly beaten
2 cups, cooked sweet potatoes,(packed solid)
3/4 cup of sugar
1/2 tsp. salt
1/4 tsp. nutmeg
1 tsp. cinnamon
1/2 evaporated milk or light cream
9-inch pastry shell
Mix the 7 ingredients in the order listed and pour into pastry shell. Bake in a 425 degree oven for 15 minutes. Reduce heat to 350 degrees and bake for 45 minutes longer until knife inserted in the center comes out clean.

MAMA'S SWEET POTATO PIE
1 large can yams
approximately 1/2 cup pineapple juice
1/4 cup butter
1 egg, slightly beaten
1/4 tsp. salt
1/4 tsp. cinnamon (add more to taste)
large marshmallows
graham cracker crumbs
Preheat oven to 350°F. Drain and mash the canned yams. Mix in all of the other ingredients (except for the marshmallows and cracker crumbs - they are your pie toppers). Mix the pineapple juice in to your liking. When you are satisfied with the mix, pour into a baking dish. Take the marshmallows and push them in all around the edge, let the tops stick out. Take your cracker crumbs and sprinkle them in the middle. Place the dish in the oven and let cook - uncovered - for about 30 minutes.

1/4 cup white sugar
1 (9 inch) unbaked pie crust

DIRECTIONS:
Preheat oven to 400 degrees F (200 degrees C).
In a mixing bowl, combine the sweet potatoes, butter, egg yolks, brown sugar, salt, ginger, cinnamon, nutmeg and evaporated milk. Mix together well.
Beat egg whites until stiff peaks form; add 1/4 cup sugar and fold into sweet potato mixture.
Pour into pie shell and bake at 400 degrees F (200 degrees C) for 10 minutes. Reduce heat and bake at 350 degrees F (175 degrees C) for 30 minutes or until firm

EASY RECIPE
go to your local book store, look up bo frieburgs 'the professional pastry chef', if they have the book at the store, look up sweet potatoe pie there, but if not, try baking .com.
its very simple, if you get pumpkin pie reciepe , just subsitute sweet potato for that. normally 1lb=1/2 c. make sure you peel and bake them first, then add some brown sugar to the reciepe, about 2 tablespoons to every 1/2c.
will turn out devine!!!
