3/4 c. flour
1/2 c. yellow cornmeal
3/4 c. milk
2 Tbsp. powdered sugar
1/2 Tbsp. baking powder
1 tsp. baking soda
1 Tbsp. sugar
1 c. sour cream
3 Tbsp. vegetable oil
2 Tbsp. honey
2 eggs
1 tsp. salt
1 dry pint blueberries
Directions:
Scald milk (heat until very hot, with little bubbles around the edge, but not to the boil) and combine with cornmeal, stirring thoroughly. Set aside and let stand.
Dust blueberries with powdered sugar.Sift together dry ingredients.
Beat eggs and add oil and honey. (measure out the oil first, then use the same spoon to measure the honey - the honey won't stick to the slick spoon.)
Combine wet ingredients with cornmeal mixture and stir well. Add dry ingredients to wet and mix only enough to wet the flour.
Fold in blueberries.
Cook on hot griddle.

TUCK In.

Ingredients
1-1/4 cups milk
2 Tablespoons vegetable oil
1 egg yolk
1 cup flour
2 teaspoons baking powder
3 Tablespoons sugar
1/2 teaspoon salt
1/2 cup blueberries
1 egg white
In large bowl, mix milk, oil, and egg yolk together. In a medium bowl, mix together dry ingredients (flour, baking powder, sugar, and salt) and add to wet ingredients in large bowl. Mix together until the dry ingredients are just wet. Mix in the blueberries. Beat the egg white until it forms stiff, white peaks. Fold the egg white into the mixture. Do not over mix; some of the egg white should be visible in the batter.

Heat frying pan or griddle until the point where a few drops of water put on pan immediately sizzle off. Pour pancakes by the 1/4 cup on to heated griddle or frying pan. Flip pancakes when bubbles appear around the edge of the pancake. Serve with maple syrup or blueberry syrup.

Add 1/2 c berries. (if frozen, roll berries lightly in flour before adding to batter)
Spray pan or use nonstick frying pan and preheat. Pour in small amounts onto hot pan. When bubbly flip and cook other side. Will cook fast.
