I have some brocolli and cauliflower in the fridge and would like to use it up tomorrow. Does anyone have a recipe for a cheesy bake or something? Thanks. And what can it go with? Salad? Potatoes?

Thanks for recipes so far....

I have a lot of cream in the fridge, and mushroom soup is the kind you add a can of milk and water to. So can I use a mixture of cream, and this soup?

BROCCOLI CAULIFLOWER CASSEROLE

1 bunch of brocoli
1 head of cauliflower
1 can of (evaporated) milk
1 can of cream of mushroom soup
1 can of cream of chicken/celery soup
2 cloves of garlic
pinch of salt
1 tbsp. of paprika
1 tbsp. of oregano
1/2 tsp. of cayanne pepper (if desired)
1/2 cup of Parmesan cheese
*1/4 cup of softened butter is optional (to be mixed with soup and milk)

Cut broccoli and cauliflower into edible-sized pieces of and set aside for the moment. Crush/mince the garlic and add the pinch of salt to the garlic, for this will help the mincing if you're doing it by hand.

In a mixing bowl, combine milk and both cans of soup and mix well. You may mix the spices in with the soup mix at this time, as well as with the garlic, or you can add the spices at the end to top off the casserole.

Finally, put the brocoli and cauliflower in a casserole dish, then pour the soup mix and spices over top, distributing evenly.

Sprinkle the Parmesan cheese over the top and bake (covered)for about 30-40 minutes at 350F, or until vegetables are soft enough to eat.

A variation of this recipe might include red peppers or sauteed chicken breast (both are quite good), which can be mixed in with the soup mix.

The combination of spices included here is only a guideline, and you are encouraged to try your own combinations, although you shouldn't leave out the garlic.

Don't have a cheesy bake recipe but I love making cream of broccoli or cauliflower soup with these two veggies. You could add cheddar cheese near the end and top the bowl with it. Add rice for a complete meal.Just whipped up a batch of cream of cauliflower soup last night.

Cheesy Veggie Bake:
(This recipes feeds @6, but you can cut in half to feed 2-3)
1 pkg each frozen broccoli and frozen cauliflower
8 oz Vekveeta, cubed
6 TBS butter, divided
1/2 c crushed butter crackers (@13)

Cook veggies drain. Place half in an ungreased 11x7x2 pan. In a small saucepan, combine cheese and 4 TBS butter. Cook and stir over low heat until melted. Pour half over veggies. Repeat layers. Melt remaining butter and toss with crackers and sprinkle over top. Bake at 325 for 20-25 min.
(If you don't like the strong flavor of Velveeta, you can always steam your veggies and once they're drained, sprinkle with shredded cheddar and let sit with lid on to melt cheese. a favorite in my house!)

This goes great with a salad and maybe some dinner rolls to dip in the cheese and of course pretty much any meat...

I had the same thingin my fridge last night. I sauteed it in a pan with crushed garlic (fresh) and butter. I put a lid on it to let it steam a bit and it really came out perfect. I had to add a little olive oil 1/2 way through or I probably would have used a whole stick of butter.

There is no one single Paleo Diet, as our ancestors from all over the world ate dramatically different diets depending on the climate where they lived, their landscape, accessibility to water bodies, and the latitude that they lived. This is a detailed meal plan for the paleo diet https://tr.im/hBiZd

In some cases, a Paleo Diet may be 90% plant foods and 10% animal foods, and in other cases, a Paleo Diet may be 90% animal foods and 10% plant foods.

For example, our ancestors that lived near the equator had year long access to more plant materials such as root vegetables and various fruits, veggies, and nuts.

On the other hand, our ancestors that lived at higher latitudes further away from the equator only had access to fruits and vegetables seasonally at one specific time period per year, and had larger periods of the year where they ate a higher % of meats, organ meats, fish, and other animal-based foods, or fermented foods that could be stored for winter.
