I need to know, because some people are coming over to dinner, to celebrate my engagement, and my fioncee has put me in charge of dessert.

Another variation of this recipe is to replace the milk chocolate with dark chocolate, the peanuts with macadamia nuts and the raspberry jellies with glace pineapple or any glace fruit.
Ingredients
250g good milk chocolate
200g marshmallows, cut into halves
1/4 cup desicated coconut
1/2 cup peanuts, chopped
1/2 cup raspberry jellies, chopped

Method
In a glass bowl, break up chocolate into pieces, melt in microwave oven on high for approx 40secs (900-1000w) stir, if still not fully melted microwave for another 20secs.
Combine the rest of the ingredients in a large bowl, pour in chocolate. Mix well.
Pour mixture into a lined slice tin, press down gently.
Refrigerate until firm. Cut into squares.
Serve with hot chocolate

ROCKY ROAD - IRISH STYLE

Ingredients:-

-8 oz good quality dark chocolate, broken into squares
-1 oz butter
-5 oz sweetened condensed milk
-30 ml whiskey
-6 oz white chocolate, chopped coarsely
-8 oz mini marshmallows
-5 oz digestive Marietta biscuits, crushed coarsely
-3 oz toasted pecans or toasted slivered almonds
-2 oz white chocolate, melted

Method:-

1) Place dark chocolate, butter, whiskey and condensed milk in a heated bain-marie.
2) Allow to very gently melt.
3) When mixture is completely smooth, remove from heat.
4) Allow to cook slightly.
5) Add white chocolate pieces, marshmallows, nuts and crushed biscuits.
6) Gently mix together, ensuring not to break up the white chocolate and biscuits too much.
7) The mixture should be chunky.
8) Transer to a non-stick container (I like to use a springform cake tin), pressing down firmly and immediately put in the refrigerator.
9) When chilled completely, drizzle the melted white chocolate over the top and allow to set.
10) Cut into pieces.

well for starters you dont really want to be making rocky road as a dessert your better off making something abit better such as

Method
1. COMBINE the biscuit crumbs and butter and press into the base of a greased and base-lined 20cm springform tin. Chill.

2. BEAT the Philly Cream Cheese until smooth, add the sugar, coffee, gelatine and cream and mix well. Pour over the base and allow to set.

3. BEAT the remaining Philly Cream Cheese until smooth, add the sugar, vanilla and gelatine, mix well. Fold in the whipped cream and pour over the coffee layer. Refrigerate until set. Dust with drinking chocolate and decorate with chocolate coffee beans.

Easy rocky road candy recipe is made with semisweet or milk chocolate and raisins and chopped nuts.
INGREDIENTS:
3 packages (8 ounces each) semisweet chocolate or milk chocolate
1 package (16 ounces) large marshmallows
8 ounces walnuts or pecans, chopped
1 cup raisins
PREPARATION:
Place marshmallows, walnuts or pecans, and raisins into a bowl. Put chocolate into the top of a double boiler over simmering water; stir until melted. Pour melted chocolate over ingredients in bowl, quickly fold to blend well and spread in a buttered 9x13x2-inch pan.
Chill until firm then cut into squares to serve.

Rocky Road Fudge

Chocolate fudge with marshmallows and chopped nuts
This easy old-fashioned chocolate fudge is cooked on the stovetop, then nuts are added and it's poured over marshmallows which have been chilled to prevent melting. It's a delicious and very special fudge, perfect for holiday giving.

Rocky Road Fudge


2 cups granulated sugar
3/4 cup evaporated milk
2 ounces baking chocolate, unsweetened
1 tablespoons light corn syrup
2 tablespoons butter
1 teaspoon vanilla
1/2 cup miniature marshmallows
1/2 cup chopped walnuts or pecans, optional
Line a 9x5x3-inch loaf pan with foil, extending foil over pan side edges. Butter the foil; sprinkle marshmallows over the bottom of the pan then put in the freezer while making fudge.
Lightly butter the interior of a 2-quart saucepan; add sugar, milk, chocolate, and corn syrup.

Cook over medium high heat until the mixture begins to boil. Continue boiling gently, stirring frequently, until the mixture reaches the soft ball stage (see below) or registers about 234° to 238°.

Remove saucepan from heat; add butter and vanilla without stirring. Let cool for about 30 minutes, then beat with a wooden spoon until the fudge just begins to thicken. Add chopped nuts and beat for a few more minutes, until it begins to lose its gloss but is still pourable. Pour over marshmallows; score into squares when set but still warm. When fudge is firm, remove from pan using foil to lift it. Cut into squares and store tightly covered. Makes about 1 1/2 pounds.

To test for soft ball stage:
Use fresh cold water each time you test the candy. In about 1 cup of cold water, spoon about 1/2 teaspoon of hot candy. Put you hand into the water and push the candy to form a ball. Gently pick the formed ball up (if it will not form a ball, it is not done) - the soft ball will flatten slightly when removed from water.

melt chocolate chips in double boiler, then pour it in a foil lined pan and quickly add nuts and marshmallows and push them down in there... let it cool and MMM!
