I'm having some friends over for dinner and am serving Quiche and Salad need some ideas for another side? By the way for dessert were having Chocolate chip cookie/ chocolate Ice cream sandwiches.

Well, your Quiche hasmost everything in it already, and the salad adds what is missing. I think the only possibility would be a starch. but Potatoes, pasta or rice don't go well with Quiche. I think maybe Garlic Bread on nice fresh Baguette might work well, a bit of cheese for colour, texture and a little extra flavour. *Kisses fingertips* Magnificent.

Yum. Quiche and salad sounds good. Baked red and yellow peppers would be a good second side. Just hollow them out, pop them in a hot oven for 10-15 minutes, and serve them in slices. Try it yourself before you serve it to friends. Baking them makes them mellower. Or you can serve them raw in finger size strips. Either way, they're great!

Try grating carrots.
Not the fine grater but the large!
Put in glass bowl.
Add 1/4 cup of water.
Cover.
Microwave until done.
Drain.
Drizzle with butter.
Presentation....this will look great on the plate!

Baked Stuffed Artichoke
Serving Size : 2

2 Artichokes
1 cup Bread crumbs
1/4 cup Grated Parmesan cheese
2 tablespoons Assorted fresh chopped herbs (such as parsley, basil and oregano)
2 tablespoons Olive oil
1/2 Tsp Salt
1/4 Tsp Freshly Ground Black Pepper

Trim the artichokes and boil until tender. Remove the chokes and set aside.

Preheat oven to 375ºF.

Combine bread crumbs, cheese, herbs and oil; season to taste with salt and pepper. Carefully spread apart leaves of artichokes, leaving them attached. Pack bread crumb mixture into all available spaces. Place on a baking dish and bake 25 minutes or until golden.

Tomato Fromage
Serves: 4

4 Roma tomatoes
Kosher salt, to taste
Freshly ground black pepper, to taste
Garlic powder, to taste
1/4 cup grated Parmesan

Preheat oven to 350ºF.

Cut the tops and a very thin piece off the bottom of the tomatoes and stand them up close together on a small sheet pan or pie tin.

Sprinkle liberally with salt, pepper, and garlic powder. Carefully pile high the Parmesan cheese on top of each tomato. Bake for about 12 minutes, or until cheese starts to turn golden brown. Remove from oven and serve as a vegetable and a garnish.

Hint: Cook the tomato fromage in the oven with your entree for the last 10 to 12 minutes of cooking so that they are done together.

Zucchini Frittata
Serves 4-6

INGREDIENTS:
1 cup water
3 tablespoons olive oil
1/2 teaspoon salt
1/2 green bell pepper, seeded and chopped
3 zucchini, cut into 1/2-inch slices
2 cloves garlic cloves, peeled
1 small onion, diced
6 fresh chopped mushrooms
1 tablespoon butter
5 eggs
salt and pepper to taste
1 cup shredded mozzarella cheese
3 tablespoons Parmesan cheese

DIRECTIONS:
Preheat oven to 350ºF (175 degrees C)

In a large skillet or sauce pan, combine water, olive oil, salt, green pepper, zucchini and garlic cloves. Simmer until zucchini is tender, about 5-7 minutes.

Drain off water and discard garlic. Stir in onion, mushrooms and butter. Cook until onion is transparent. Add eggs and stir; season with salt and pepper. Cook over low heat until eggs are firm.

Sprinkle mozzarella cheese over eggs. Bake in preheated oven for 10 minutes. Remove from oven and sprinkle with Parmesan cheese.

Place under broiler for 5 minutes. Let stand 5 minutes before cutting into wedges and serving.

Sounds fine with just what you have. Maybe some fresh cut vegetables with a dip.
