At a recent dinner party I broke wind and the host said 'How dare you fart before my wife'. Is there a pecking order and where do you sign up?

You should never fart at a dinner party.

Speaking of upper crust... did you know that life during the 1500's:

Bread was divided according to status. Workers got the burnt bottom of the loaf, the family got the middle, and guests got the top, or the upper crust.

My experience is that the nearer you are to the top of the crust the more likely you are to fart and swear, although not on state occasions. It's those who haven't yet made it, but are aspiring who are so prissy. Your host was obviously still aspiring.
Of course, people who are really upper crust often possess dogs and if you let one drop you can always blame them.

The host was no gentleman, as a gentleman would not have drawn attention to his guest's embarrassing predicament and if he ever did have occasion to refer to your breaking wind, that is just what he would call it. As it is, he used a crude Anglo-Saxon term in front of his wife, embarrassing you and everyone else, and so presumably he does not hold her up in public to be a lady. If he talks like that in public, goodness knows what he says in private!
The pecking order is presumably dictated by how you can persuade those around you to regard you. I reckon that this man and his wife came down a couple of notches by his unseemly behaviour to a guest.

I have a boyfriend from the upper crust yes, he goes shooting and fishing and all that stuff, and his mother would probably die if I farted in front of her! However his father would just get the chuckles. But my boyfriend in all his life has seen his mother fart twice, once when stretching for somthing and once when she sneezed, and both times she told him off for smiling!

Its not nice to fart in public in restaurants or while others are ingesting their own fart fuel.

But its perfectly alright to let one go, if you can do it with anonymity in other places.
Except in a packed elevator.

Also, it isn't wise to save them up for too long, its best to excuse yourself and go somewhere to let off a little pressure. Because if you do hold it in for too long, you're either gonna spontaneously explode or you're gonna crap yur pants in a loud and messy way.
