Crock Pot Enchiladas
Serves 6
1 lb Ground Beef, lean
1 (8.5 oz) White Onion, chopped
1 (4 oz can) Mild Chopped Green Chilies (leave these out if you don't want it to be spicy)
1 (14 oz can) Enchilada Sauce
1 (10-3/4 oz can) Golden Mushroom Soup
1 (10-3/4 oz can) Cheddar Cheese Soup
1 (10-3/4 oz can) Cream of Mushroom Soup
1 (10-3/4 oz can) Cream of Celery Soup
Instructions:
Brown hamburger and chopped onion and pour off grease.
Put all ingredients in crock pot. Mix and cook low 4-6 hours.

Chicken Parmesan
Serves 6
1/3 Cup Parmesan cheese, grated
1/4 Tsp Italian Seasoning, crushed
6 (4 oz) Chicken Breast, boneless, skinless
1 Tbsp Unsalted Butter
1/2 Cup White Onion, diced
1 Tbsp All-Purpose Flour
1/2 Cup 2% Milk
1 (1 oz packet) Ranch Flavored Salad Dressing Mix
6 Slices Mozzarella Cheese
1/2 (10 oz pkg.) Spinach, frozen, thawed, drained
1 Tbsp Pimiento, chopped
Instructions:
Preheat the oven to 350ºF
In a small mixing bowl combine cheese, ranch salad dressing mix, and Italian seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside. Arrange the pieces in an 8x8x2-inch baking dish. In a small saucepan cook onion in hot margarine until tender.
Stir in flour; add milk all at once. Cook and stir till bubbly; stir in drained spinach and pimiento. Place a slice of cheese and spoon the spinach mixture over the chicken; sprinkle with remaining cheese mixture. Bake, uncovered, for 30-35 minutes or until tender.

Chicken Pasta Alfredo
Serves 6
6 Qts Water
12 oz Fettuccine Pasta
2 Tbsp Peanut Oil
6 (4 oz) Chicken Breast, boneless, skinless
2 (10-3/4 oz can) Cream of Mushroom Soup
1 (20 oz bag) Frozen Broccoli Florets
3/4 Cup Parmesan Cheese, grated
Instructions:
Heat a large pot of water, over high heat. When water comes to a boil add the pasta and boil for 8-10 minutes. Drain; reserving 2 cups pasta water. Cut the chicken into strips (1/4''x1''); set aside.
In a large frying pan, over medium-high heat, add the oil and chicken pieces stirring frequently until golden brown.
In a medium saucepan, over medium heat, add the chicken pieces, sauce, 1/4 cup reserved pasta water, stirring frequently. Add the remaining pasta water into the saucepan and bring just to a boil, then add the broccoli. Cook for 1-2 minutes. Remove from heat.
Divide the cooked pasta evenly between serving dishes and top with chicken and broccoli mixture.

Crab Quiche
Serves 6
1 (8 oz pkg.) Louis Kemp Crab Delights, flaked
3/4 Cup Mexican Style Cheddar Cheese, shredded
1/2 (8 oz pkg.) Cream Cheese, cut into 1/4'' cubes
1/4 Cup Green Onions, sliced
1/2 Tsp Salt
1/2 Tsp Basil
1/2 Cup Heart Healthy Bisquick
1 Cup 1% Milk ''Skim''
1/2 Cup Eggbeaters
3 SecondsNonstick Cooking Spray
Instructions:
Preheat the oven to 350ºF
Mix the crab delights, shredded cheese, cream cheese, onions, salt, and basil in a medium bowl.
Coat a 9-inch pie plate with nonstick cooking spray and spread the crab mixture into the bottom.
Beat the remaining ingredients until smooth. Pour over the crab mixture and bake for about 40-45 minutes.
Serve immediately.

Do stuffed pasta shells.
Buy the big pasta shells that come in a blue box and they'll say "Jumbo Pasta Shells".
Boil shells in water, do not over cook because you won't be able to work with it.
Brown hamburger meat, drain. Add spagettic sauce to meat.
In a bowl, melt 2 cups motszerrla (bad spelling) cheese (shredded) and 1 regualr bar of cream cheese until soft.
When shells are cool, spool cheese mixture into shells with a tablespoon like you would spread peanut butter on the edge of a peice of bread.
Once that is done, place them in a baking dish and bake for about 25-30 minutes. Then top with sauce and meat mixture and return to oven for about 20 minutes.
It is sooooo good!

Double or triple this recipe for your family reunion
Chicken And Wild Rice Casserole
2 (14 1/2-ounce) can green beans, rinsed and drained
3 cups diced cooked chicken
1 medium onion diced and sauteed
1 (8-ounce) can water chestnuts, drained and chopped
1 (4-ounce) can pimentos
1 (10 3/4-ounce) can condensed cream of celery soup
1 cup mayonnaise
(6-ounce) box long-grain and wild rice, cooked according to package directions
1 cup grated sharp Cheddar
Pinch salt
Preheat oven to 350 degrees F.
Mix all ingredients together and pour into a greased 3-quart casserole dish. Bake for 20 to 25 minutes or until bubbly.

Maine Lobster Lasagna

"I made up this recipe because my hubby wanted to try a lasagna made with lobster meat. I combine tender steamed Maine lobster chunks in between pasta, jarred or homemade Alfredo Sauce and fresh spinach and ricotta, Cheddar and Parmesan cheeses. Serve with a tossed garden salad and oven toasted garlic bread."

INGREDIENTS:
1 (15 ounce) container ricotta cheese
2 eggs
2 cups shredded Cheddar cheese
1 cup shredded mozzarella cheese
1 cup grated Parmesan cheese
1 medium onion, minced
1 tablespoon minced garlic
2 tablespoons chopped fresh parsley
1 teaspoon freshly ground black pepper
2 (16 ounce) jars Alfredo pasta sauce
16 no-boil lasagna noodles
2 pounds cooked and cubed lobster meat
1 (10 ounce) package baby spinach leaves

DIRECTIONS:
Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13 inch baking dish.
In a large bowl, stir together the ricotta cheese, eggs, half of the Cheddar, half of the mozzarella cheese and half of the Parmesan cheese. Mix in the onion, garlic, parsley and pepper.
Spread 1 1/2 cups of Alfredo sauce in the bottom of the prepared baking dish. Top with a layer of lasagna noodles. Arrange 1/3 of the lobster meat over the noodles, cover with 1/3 of the ricotta cheese mixture, then 1/3 of the spinach and then another layer of Alfredo sauce. Repeat this process two more times ending with sauce on top. Sprinkle the remainder of the Cheddar, mozzarella and Parmesan cheeses over the top. Give the whole pan a gentle shake to get everything settled in.
Bake, covered loosely with aluminum foil, for 45 minutes in the preheated oven. Remove the foil and continue baking for an additional 10 minutes or until the top is browned. Let stand for 10 minutes before serving.

This easy recipe takes little to prepare and is full of flavor. They should love it!
Chicken and Sausage Risotto:
(can substitute (or add) beef cubes for either chicken or sausage if you prefer)
3 lbs. chicken, cut into pieces
6 oz smoked sausage, cut into pieces
3 TBS butter
1 large onion, diced
3 sticks celery, diced
1 large bell pepper, diced
1 clove garlic, minced
1 14oz can tomatoes
1 c. uncooked rice
minced parsley
4 c. chicken broth
saute onion until brown, then add celery, bell pepper, and garlic.
Cook briefly. Add s&p and rice, stirring to mix well.
Add chicken, tomatoes, sausage and broth, mix well. Bring to boil. Reduce heat and simmer 20-25 min. stirring occasionally until chicken is done and rice is tender and most water is absorbed. Sprinkle with mixed parsley to serve.

I hate macaroni salad and I am sure other people hate it too!
Make a Kraft dinner or Kraft fettuccini alfredo.
Very simple just follow directions on package.
Add cubes of ham or chicken breast!
That would go over better with me!

You're the best dish to bring... ;o)
If you have time but no energy, roasts are pretty easy. Otherwise sloppy Joes go over really well! Just brown the meat and add the slop :o)

I love to check out all recipes.com. when I am going out with a dish. So many dishes and you can search for good potluck dishes that will hold up well. I personally like to take broccoli salad.

curry chicken, my favorite!
simply add curry powder, water, a pinch of salt and chicken pieces in a pot. Boil/Stew for 2~3 hours. Done =)

i make a macaroni salad with tuna in it you could add baby shrimp too 2 lbs mac.....boil blah blah,,,,,onions celery chopped,add to cooked mac...cut tomatoes and cucumber...toss together...add mayo...salt .pepper,oldbay seasoning....all to taste....fold in tuna and shrimp at end ,let set for one hour before serving......
