I've been to FoodTV, Better Homes and Gardens and other sights that don't give me anything good if anything at all useful. I lost my cook book 3 months ago and now I'm asking you; What is the best cookie recipe ever?

I don't know if this is the best COOKIE recipe ever, but it is the best PEANUT BUTTER COOKIE recipe I've ever found.

Peanut Butter Crisps

1 cup (2 sticks) butter or margarine, softened and divided
1 cup sugar
1/4 cup light corn syrup
1 egg
1 teaspoon vanilla extract
1 2/3 cups (10 oz. package) Reese's peanut butter chips
2 cups flour
2 teaspoons baking soda
1/4 teaspoon salt
granulated sugar

In large mixer bowl, beat together 3/4 butter and sugar until light and fluffy.
Add corn syrup, egg, and vanilla; blend well.
In medium microwave-safe bowl place peanut butter chips and remaining 1/4 butter. Microwave on high 1 to 1 1/2 minutes; stir until smooth when stirred.
Blend into butter mixture.
In separate bowl, stir together flour, baking soda, and salt; add to peanut butter mixture, blending well.
Refrigerate 1 hour or until firm enough to handle.
Heat oven to 350 degrees F.
Roll dough into 1 inch balls, roll in sugar.
Place on ungreased cookie sheet.
Bake 10 to 12 minutes or until golden brown around the edges.
Cool slightly; remove from cookie sheet to wire rack. Cool completely.
Makes about 5 dozen cookies.

I have another recipe that's really good......it's for a blonde brownie. I think that one has replaced choclolate chip cookies for me! If you'd like it, just email me. Happy baking!

JAM FILLED NUT COOKIES

Ingredients:-

-1/4 cup blanched almonds
-1/2 cup filberts, skins removed
-1/4 cup white sugar
-4 egg whites
-1/8 teaspoon salt
-1/8 teaspoon cream of tartar
-1/2 cup sugar
-raspberry or strawberry jam

Method:-

1) Blanch the almonds for 1-2 minutes in simmering water; drain and place on a cookie sheet. Toast for 10 minutes at 350°F degrees.
2) Toast the filberts (do not brown). Allow to cool slightly, then rub off the skins with a clean towel.
3) In a food processor, grind filberts and almonds with sugar, by pulsing several times until fine.
4) Using a pastry bag or cookie shooter with a round tube, pipe cookies (in 1-inch mounds) onto a greased silicone baking or cookie sheet that has been greased and dusted lightly with flour. 5) Alternatively, drop by tablespoonfuls.
6) Bake at 300°F for 10-15 minutes or until the top has a light crust but is still soft. Allow to cool for several minutes, then use a spatula to remove from baking sheet.
7) When cookies are thoroughly cooled, make a sandwich of two cookies with raspberry jam.
8) These can be served as is or drizzled with lemon or vanilla flavored confectioners icing or glazed with dipping chocolate.

ENJOY!!

1 teaspoon baking soda
1 cup butter, softened

1 (3.4 oz) package instant vanilla pudding mix
2 eggs
1 teaspoon vanilla
2 cups chocolate chips (1 package)

•Preheat oven to 350°.

•Sift flour and baking soda together and set aside.

•In a large mixing bowl, cream butter, brown sugar and sugar together.

•Beat in pudding mix until blended.

•Stir in eggs and vanilla.

•Add flour and baking soda mixture.

•Stir in chocolate chips.

•Place in small balls on an ungreased baking sheet.

•Bake for 10 to 12 minutes.

My chocolate chip cookie recipe is the best ever. I have people, some who I barely know, call my house asking me to bake them a batch of my cookies. But I'm not sharing the recipe. It is a sweet sweet secret.
