Placing flowers before a statue of Mary
“Some couples may wish to dedicate their marriage to the
Blessed Mother. Before the dismissal, the couple takes a flower or bouquet to the statue or altar of Mary and places it there. They remain there for a time of prayer and then return to their places.” This custom reflects a personal devotion to the Blessed Virgin Mary and is not part of the Rite of Marriage. Most policies suggest that couples who have a particular Marian devotion make this gesture at the rehearsal or after the final blessing.

I'm Catholic, and have been to many Catholic weddings, and I have never seen that done. If it does happen, then it might be symbolic of the fact that Mary was married to Joseph. It's kind of about the Christian family Father, Mother, and Child (even though Joseph was Jesus's adopted father, but still).

I would imagine it is because the virgin mary is the mother of Jesus and this perhaps is a way to honor the girls mother and her being a female honoring her as a female that will be the one to carry and bare any children that may come from this special union the couple entered.. Also who better to intercede to our Father then the lords mother?

Mary accepted her life as God laid out. Mary dedicated herself to God and thus her marriage and the full will of God - giving birth to Jesus. when a CAtholic woman presents a bouquet it is done as one would give a bouquet to their own mother. the Catholics feel a kinship to mary as their hero -- the Woman. when they present the bouquet they pray asking God to make them a loving, gentle, understanding and responsible a wife and mother as Mary was in her marital station.

Well, though I'm Catholic, I've never been to a Catholic wedding (one with a mass and everything) but I think it's to honor Mary.
