Some women bake,some clean,some go hiking,some go jogging some eat - what a woman does is up to the individual woman but all serve the purpose of getting mind/body involved so as not to feel upset,angry or depressed.

Because it take one's mind off the daily trouble. The act of baking - getting everything out and prepared (aka mies en place), measuring, mixing, chopping, grinding, and even doing KP, are all familiar routines, and people take comfort in those routines. Also, people often eat when they're upset, and raw cake batter or cookie dough tastes pretty good. Plus, at the end, there is a positive outcome, and the family has a cake or cookies to eat.

FWIW, I find that kneading bread dough, in the OLD-FASHIONED way, sure is great for taking out a lot of aggressions. After 15 minutes of pummelling, kneading, slapping, throwing, and punching dough....I'm usually feeling MUCH better (but the kitchen looks like a Julia Child Massacre).
And when you're gloomy or feeling bad---can you think of anything better to lift your spirits up than a nice dose of cinnamon and brown sugar?

Why?
Maybe because...
... woman traditional role is as a home maker and in times of trouble we revert back to established roles
... food is comforting and may bring back fond memories of safe childhood times.
... or baking takes their minds of problems
