They will keep in the fridge for a year. I use them just to nibble
on here and there. The fresh ones are delicious, but wont keep
and not available in most areas.

You could bake cookies, muffins, strudel, bread, etc. They can be added to meat dishes. They go especially well with Lamb and Pork, but could also be paired up with poultry and some hearty fare seafood like shark or swordfish as a pureed sauce.Chop them up and add them to a box or two of stove top stuffing, but use apple juice instead of water or broth to cook it up. Maybe chop up some almonds or pine nuts to mix in as well and serve it up with chicken, pork or lamb.I did see a easy appetizer with dates this weekend on the Food Network. The guy took dates and stuffed them with ricotta cheese and wrapped them with bacon. Take a zip-lock bag and put your cheese in it. snip off a bottom corner and you have an instant pastry bag. Cut a slit with a narrow knife into the date about 3/4 of the way. Place the tip into the slit and squeeze in an ounce or two of the cheese. Take your bacon and cut it in half, then wrap it around the date and secure it with a tooth pick. put in oven at 400 degrees until bacon crisps. They looked pretty good. As I recall a few other shows that day had dates in the recipe. Go to the Food Network website and check for recipes there. Rachel Rae did one called Road to Morocco Lamb that had dates.
You could always wrap them up individually and sell them on-line as a new On-line Dating Service to lower your inventory.

Date and Nut Roll
From Diana Rattray,
No bake dessert date nut roll with vanilla wafer crumbs, dates, sweetened condensed milk and lemon juice.
INGREDIENTS:
* 2 cups vanilla wafer crumbs (about 8 ounces)
* 1 cup chopped dates
* 1/2 cup sweetened condensed milk
* 2 teaspoons lemon juice
* 1/2 cup chopped nuts
PREPARATION:
Combine vanilla wafer crumbs, dates, and chopped nuts. Blend condensed milk and lemon juice; add to crumb mixture and knead well to blend ingredients. Form into rolls about 3 inches in diameter. Roll in more wafer crumbs then wrap in waxed paper.
Chill for at least 12 hours, then cut into 1/4-inch slices.
Serve with whipped cream or dessert sauce for a deliciously different dessert

DATE PINWHEELS..heres recipe they are tasty
* 1 package (8 ounces) pitted dates, chopped
* 1 cup water
* 1/4 cup sugar
* 2 teaspoons lemon juice
* 1 cup finely chopped pecans or walnuts
* .
* Dough
* 1 cup butter, softened
* 2 cups brown sugar, firmly packed
* 2 eggs
* 3 1/2 cups all-purpose flour
* 1/2 teaspoon baking powder
* 1/2 teaspoon salt
* 1/4 teaspoon baking soda
PREPARATION:
In a saucepan, combine dates, water, sugar and lemon juice. Bring date mixture to a boil then reduce and let simmer for about 10 minutes, stirring occasionally. Stir in chopped nuts.
In a mixing bowl, cream butter, brown sugar, and eggs until light and fluffy. In a separate bowl, combine flour, baking powder, salt and baking soda; stir to blend. Gradually add dry ingredients to creamed mixture. Beat until just blended. Divide dough into three equal portions. Wrap in waxed paper and chill until easy to handle.
Between sheets of waxed paper, roll each portion into a ractangle, about 12 x 8 inches. Remove top piece of waxed paper and spread each rectangle with about 2/3 cup of the date mixture. Starting with the 12 inch side, lift edge of waxed paper. Peel paper off as dough is rolled, jelly-roll fashion. Repeat with remaining portions and filling. Wrap rolls in waxed paper and refrigerate for several hours or overnight.
Preheat oven to 350°. Cut each roll into 1/4 inch slices and place about 1 inch apart on greased cookie sheets. Bake for 10 to 12 minutes; cool on racks. Makes 7 to 8 dozen.

Dice them up and put them in muffins, cakes, pancakes. Stuff them with peanutbutter and take some "on the go." There are health food recipes that use dates as sweetener:

Date Balls:
1 stick butter
1 c sugar
8 oz dates
4 c Rice Krispies
Powdered sugar
Melt butter, sugar, and dates. Then add rice krispies. Cool and roll into balls. Roll in powdered sugar.

Try the Food Network site... when you search "dates" you come up with both sweet & savory recipes so you won't get bored with the same thing! (The ricotta-stuffed bacon-wrapped dates look really good!)

dates are great!
cookies, boil them in oatmeal or other hot cereal with milk or 1/2 and 1/2 , date bread, fruit cake, put them in yogart or ice cream, vanila pudding; anywhere a raisin might go.

oh, make datenut bread!!
there are a million good recipes... I make a bunch at a time and freeze them. We pull them out for breakfast or when someone comes over... yum yum yum!!!
