A1, worchestire, liquid smoke, coke, brown sugar
Shiner Bock Beer, brown sugar
Olive Oil, Balsalmic Vinegar, Cracked Pepper
Dr. Pepper and barbecue sauce
hoisin sauce and soy sauce for an Asian flair
Pineapple juice, lemon juice, habanero peppers
Just be sure that there is something slightly acidic to tenderize the meat or the marinade will never make it inside.

This recipe is very good with pasta: Grilled Tropical Tuna Steaks ½ cup pineapple preserves, or any other tropical fruit ¼ cup hoison sauce 2 tablespoons lime juice 1 tablespoon fresh cilantro, chopped 1 teaspoon grated fresh ginger 1 teaspoon sesame oil 4 tuna steaks, 6 ounces each, about 1" thick Prepare marinade: combine first 6 ingredients in a ziplock bag, mixing well. Add tuna steaks to marinade. Refrigerate one hour. Prepare outdoor grill, lightly oil grate. Remove tuna steaks from marinade, shake off excess and discard remaining marinade. Cook on grill 4 -5 minutes per side, careful not to overcook. Tuna should be lightly browned on the outside but still slightly pink in the middle. Serve immediately. If unable to grill, can easily be broiled.

I chop up rosemary, parsely, thyme, garlic (lots of that), with Montreal steak seasoning, and some lemon rind. I put some olive oil on the steak and rub the herb blend on both sides. Let it sit for at least 30 mins and grill. Delicious.

Acidic marinades add flaor but can toughen your meat
the longer you let them marinate the better

Montreal steak seasoning pinaples cayenne pepper and vodka. It is unbelieveable sweet,spicy, and tangy all in one. My favorite recipe.

champagne with fresh peaches.....you can finish the l/o champange...only need 2 cups..this make a great reduced sauce with butter added and peaches pureed...
