I saw it on the menu for Cheesecake Factory and wanted to try and make it on my own. But I don't have a recipe and I never made Pineapple Upside Down cake so I wouldn't know how to fuse it. Let me know, thanks!

Pineapple Upside-Down Cheesecake
Serves: 8

1 (6-8 oz.) can pineapple chunks
1/2 cup brown sugar
2 (8 oz.) pkgs. cream cheese
4 eggs
1 cup white sugar
1 tsp. vanilla
1/2 tsp. salt
3 Seconds Nonstick Cooking Spray

Preheat the oven to 350ºF

In 9-inch round nonstick cake pan and coat with a nonstick cooking spray, crumble brown sugar in bottom of pan.

In a small bowl blend the pineapple, pineapple juice, and brown sugar. Pour this into coated cake pan. Set aside

In blender or food processor, blend eggs, white sugar, vanilla, and salt until well mixed. With blender or processor still running, drop in pieces of cream cheese until all of it is used. Blend until completely smooth.

Pour cream cheese mixture evenly over pineapple mixture in the cake pan in beginning of this recipe. Place cake pan in slightly larger pan which contains about 1/4 inch of water. Do not allow this water to get in the cream cheese mixture.

Bake for 55-60 minutes, or until center of cheesecake is firm. When done, wait until cool before turning out onto serving plate. Since the bottom becomes the top, this cheesecake has no crust.

Paula Deen has a really great and convenient version of the original recipe. She makes them in muffin tins and uses biscuits in place of cake. I’ve made them, they’re really good.

Here's the recipe:

Pineapple Upside Down Biscuits

1 (10-ounce) can crushed pineapple
1/2 cup packed light brown sugar
1/4 cup (1/2 stick) butter -- at room temperature
10 maraschino cherries
1 (12-ounce) package refrigerated buttermilk biscuits (10 count)

Preheat the oven to 400°F. Grease 10 cups of a muffin tin. Strain the can of crushed pineapple, save juice for later. Combine the pineapple, sugar, and butter, and mix well. Divide the pineapple mixture among the muffin cups. Place a cherry in the center of each muffin cup, making sure cherry hits bottom of cup. Place 1 biscuit in each cup on top of sugar and pineapple mixture. Spoon 1 teaspoon reserved pineapple juice over each biscuit. Bake for 12 to 15 minutes, or until golden. Cool for 2 minutes. Invert the pan onto a plate to release the biscuits. Serve warm.

Pineapple Upside-Down Cake

Dole Company (Adapted recipe)
1930s

Fruit Layer Ingredients:
1/3 cup butter
2/3 cup brown sugar, firmly packed
1 can (20 oz.) pineapple slices in juice, drained (7-8 slices)
7-8 Maraschino cherries, drained
Cake Ingredients:
1-3/4 cups all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
3/4 cup granulated sugar
2 Tbsp. grated orange peel
1/3 cup butter, room temperature
3 large eggs, room temperature
1 tsp. vanilla extract
2/3 cup buttermilk, room temperature
1 cup whipping cream, stiffly beaten

1. In an oven-proof 9- or 10-inch diameter skillet or baking pan, melt butter for fruit layer; sprinkle brown sugar over butter. Stir until smooth. Arrange pineapple slices on brown sugar. Place cherry in center of each slice; set aside.

2. In a medium bowl, whisk together flour, baking powder, baking soda and salt. In a large bowl with electric mixer, beat sugar, orange peel and butter until blended, about 1 minute. Beat in eggs, one at a time, beating for 30 seconds after each addition. Add vanilla. Add flour mixture and buttermilk alternately to egg mixture, mixing to combine.

3. Spoon cake batter evenly over pineapple layer. Bake in a 350° F oven for about 45 minutes or until cake tests done when wooden pick is inserted in center. Immediately turn upside down onto heat-proof plate. Let skillet remain over cake for a few minutes to allow syrup to cover cake. Serve warm with whipped cream.
