Steam the beets until just tender. Peel them, quarter them coat them with 1/4 of this mixture: 1/4 cup of balsamic, 1 Tbls honey 1/3 cup of olive oil and 3 Tbls of shallots. Roast at 450 degrees F for about 12 minutes.

You can put these over fresh arugula or raw spinach with the remaining dressing. Here is the recipe.

Orange Glazed Beets
2 1/2 cups sliced raw beets
1 cup orange juice
1 tablespoon butter
1 teaspoon salt
1 teaspoon grated orange peel



Peel raw beets; slice thinly. Arrange slices in a 1 1/2-quart buttered casserole. Combine remaining ingredients and pour over sliced beets. Cover and bake at 350° for 1 hour.

You can make a russian soup called Borscht.

or

A salad with hard boiled eggs, finely chopped iceberg lettuce, onion, parsley and tuna. Add a mayonnaise dressing.

Raw in a fresh fruit juice...Take a small beet, peel it, puit in juicer with 2 apples, and some carrots...

"Red Flannel"
2 potatoes and 1 large beet... Peel and grate.
add a tblsp. of flour, salt and pepper to taste.
Place oil in a frying pan. when it's hot, place a large spoonful of the mixture in the pan, fry until slightly brown turn over end brown the other side... Nice to accompany sausages, or baked ham..

BAKED BEETS

Ingredients:-

-8 med. to lg. beets (rinse, do not peel) with roots & 1/2" stem
-3-4 tbsp. butter
-Finely slivered orange peel
-1/4-1/3 c. orange juice

Method:-

1) Preheat oven to 400 degrees.
2) Line pan with foil.
3) Arrange beets.
4) Cover and bake 1 hour.
5) When cool rub skin away and remove stem and root.
6) Slice thickly.
7) Melt butter.
8) Add orange peel.
9) Cook 1-2 minutes.
10) Add juice and cook 1-2 minutes.
11) Stir in beets and heat well.

Beets in Orange Butter Sauce

INGREDIENTS:
2 tablespoons sugar
1 tablespoon cornstarch
1/4 teaspoon salt
1 cup orange juice
1/4 cup butter
2 cups sliced cooked beets

PREPARATION:
In a saucepan, combine sugar, cornstarch, and salt. Stir in orange juice. cook, stirring constantly, until thickened. Add butter and beets; heat through.
Serves 4.

They are pretty good raw in salads or steamed....they seem to get a bad wrap but I think they are pretty tasty!

you can boil them and serve with salt pepper and melted butter or, you can boil them, chill and slice and serve cold with mild onion and salad dressing.
