i just bought a slow cooker and need some recipes!

After you try this beef roast, you will wonder how you ever got along w/o a slow cooker!

Easy Crockpot Beef Roast

1 chuck or rump Beef Roast (sized for your crockpot)
1/2 Cup of Water
1 Packet of Ranch Dressing Mix
1 Packet of Italian Dressing Mix
1 Packet of Brown Gravy Mix

Put roast in crockpot, pour water around the base. Sprinkle all 3 dry seasoning packets over roast. Cover and cook for 6-7 hours on low. Remove roast to cutting board and let sit 15 minutes; slice thinly across the grain (electric knife works best).

It makes great tasting gravy too, that tastes like you browned it and simmered it all day on the stove. Doesn't taste AT ALL like salad dressing!!!

Beef With Red Wine Sauce

Prep: 15 min., Cook: 6 hrs.

3 pounds boneless beef chuck roast, cut into 1-inch pieces
1 medium onion, sliced
1 pound fresh mushrooms, sliced
1 (1.61-ounce) package brown gravy mix
1 (10 1/2-ounce) can beef broth
1 cup red wine
2 Tbsp. tomato paste
1 bay leaf
Hot cooked egg noodles or rice
Garnish: chopped fresh parsley

Place first 3 ingredients in a 6-quart slow cooker.
Whisk together gravy mix and next 3 ingredients; pour evenly over beef and vegetables. Add bay leaf.
Cover and cook on HIGH 6 hours, or LOW for 9 hours. Remove and discard bay leaf. Serve over noodles. Garnish, if desired. Yield: Makes 6 servings

Slow Cooker Barbecue Beans

Prep: 5 min., Cook: 1 hr. This recipe is perfect for leftover barbecue. Although it calls for pork, feel free to use chopped or shredded chicken, turkey, or brisket. If time is a concern, pick up meat from your favorite barbecue joint (just make sure you get it without sauce to prevent the beans from being too soupy).

1/2 pound chopped or shredded barbecue pork
1 (32-ounce) can pork and beans, undrained
1 (14 1/2-ounce) can diced tomatoes with green peppers and onions, drained
1/4 cup spicy brown mustard
3 tablespoons brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon molasses (optional)

Stir together first 6 ingredients, and, if desired, molasses in a 6-quart slow cooker. Cover and cook at HIGH 1 hour. (You can keep this recipe warm on LOW for up to 2 hours before serving.) Yield: Makes 8 servings

Toss a whole chicken, cut up, in a slow cooker sprayed w/ nonstick cooking spray. Cut onions into rings and tuck in and around chicken. Pour 1 bottle of your favorite BBQ sauce over it all, top w/ lid, set to Low, and cook 6-8 hours.

At least you're realistic about the amount of preparation you're willing to do. Your local library probably has several cookbooks which contain nothing but slowcooker recipes, and other cookbooks with slowcooking sections. If your library doesn't have these books, ask the librarian for an interlibrary loan. My basic recipe is to put a large chunk of some sort of meat in the cooker, add a little liquid, and possibly add some minced dried onions. The minced dried onions can be found in the spice & seasoning section of the store, and they work very well in a slow cooker. I think that they taste better than fresh onions, and they are certainly much faster to use. The cheaper cuts of meat are actually better in a slow cooker than the more expensive ones. The cooker will give the cheap cuts time to break down over the long cooking period. So, use dark chicken meat, thighs or drumsticks, rather than breasts. Use a chuck or 7 blade roast, rather than round. Canned broth is great to put in a slow cooker, or use flavor base, mixing it with a little hot water. I like Better than Buillion flavor base, as it has a lot less sodium than buillion cubes. Wine is a great liquid to add, too. Just remember that slow cooking will produce a lot of liquid, and you usually won't need to add more than a cup. Slow cooking is a great way to keep from heating up the house, too.

Roast:
- small cut of beef (rump roast works well but most any bone-in cut will work also)
- one packet dry Lipton Onion Soup mix
- Yukon Gold potatoes (2-3) peeled and diced
- 1/2 cup diced carrots (or 1/2 small bag of baby carrots)
- 1/2 - 1 cup diced yellow onions (optional depending on how much onion you like)

place all ingredients in the slow cooker

pour enough warm water into slow cooker to just cover meat

turn slow cooker on low and cook for at least 8 hours

(I usually turn this on when I leave for work and it's done by the time I get home from work)

There wasn't a recipe book with the cooker?? Contact the company and ask if they have one. Go to Amazon.com or Barnes&Noble they will undoubtedly have several recipe books. And often times when you are waiting in the checkout line at supermarket or K-mart or WalMart they will have tiny ones displayed near the register. And there is always your favorite site for searching. Just type in slow cooker recipes or crockpot recipes.

Ham & Cheese Potato Dinner

1 bag (28oz) frozen diced potatoes w/ onions & peppers, thawed
2 cups shredded Cheddar & Monterey Jack cheese blend
1 can (10 3/4oz) condensed cream of celery soup
1 container (8oz) sour cream
3 lb fully cooked smoked boneless ham

1. Spray 5-6 quart slow cooker with cooking spray. Mix potatoes, cheese, soup and sour cream in slow cooker. Cut ham length wise in half; place ham on potato mixture.

2. Cover and cook on low heat setting 5-6 hours. Stir well before serving. Serves 8

Easy Brunswick Stew

2 cans BBQ pork - Castlebury
2 cans BBQ beef -Castlebury
2 cans chicken, boneless - Swanson
1 (16 oz.) can tomatoes
1 reg can cream corn
1 reg can whole kernel corn
1 large onion, chopped
1 small bag frozen baby lima beans
1 tbsp bbq sauce
few dashes of hot sauce
2 cups water
salt and pepper to taste
Squish up tomatoes with clean hands; chop up the chicken. Break up all beef and pork. Mix together and cook in crock pot overnight or all day on low temperature.
Easy and delicious!

Toss a pork roast in with some pearl onions, a few cloves of garlic, cover with Dr. Pepper, Vanilla Cherry Coke or Root Beer, and cook on slow for 8 hours or medium for 5. You would be surprised.

Great Northern White Beans
wash bean in a colander
put in pot and bring to boil
lets beans cool to room temperture
rinse beans in warm water
put beans in crock pot with 1 Tbls salt ,1 ham hock.4 Tbls vinegar
turn to low and let them cook over nite or until tender
