Wear diving goggles!
I know it sounds funny, looks funny to, but the goggles seal around your skin and prevent any gasses for getting to your eyes.
There will be others that are certain that you light a candle, or cut under running water are the answer...they're not!
Here's an example:
2. How to Cut an Onion Without Crying
Goggles are one option. The other is to choose a type of onion with a low sulfur content, such as Vidalia, Texas 110, or Maui. White and Spanish onions are fairly packed with the stuff.
* If you're set on using a bad-boy variety, minimize sulfur release by chilling the onions in the fridge for at least two hours.
* Then cut the onion in half vertically and lay each half flat on a cutting board.
* Peel back the skin, keeping the root intact so the onion is easier to cut and less sulfur enters the air.
* Then start chopping.

Proper ventilation while cutting them is the key. With each cut juice and oil come sray upwards from the onion. If you're not in a ventilated area it's going to hang out right around your face, which we're trying to avoid here. Get a fan and open a window if you can. Also if you're using a very sharp knife will cut down on the juice and oils from coming out with each cut.
The other suggestions on this thread is basically cutting down on the oil and liquid spraying up. It works for the most part, but I don't like to mess with the integrity of the onion. I hope this helps. Good luck with those onions!
I hope this helps out.

Run water near where you are cooking, or hold a wooden matchstick - unlit and unused - in your teeth while cutting them.
Or stand back a little from the board - if you're not right over it, they the fumes don't rise into your eyes.
Consider using a different type of onion as well - some put off more fumes than others.

* Put them in the freezer for about 5 to 10 mins. before cutting.
* Cut the onion BY cold running water.
* SLICE and not chop (there is a difference between the 2)
* Cut diagonally and away from you
Or... Use a food processor! :-)

1. Lite a candle while you're cutting the onions, or cutting the cheese ;)
2. Cut the onions underwater (don't forget to come up for a breath)
3. Have your spouse do it

Cut the onion in water using a stainless steel knife. After cutting--scrape the knife over your hand which held the onion, wash with soap and water--and your hand won't stink of onions.

I've heard that chilling the onions first in the fridge cuts down on watery eyes. If you're that watery, the onions are getting older. Then they really make you cry.
