"Homemade Salsa
1 (28 oz.) can crushed tomatoes
1 tsp. dried cilantro
1/2 c. finely chopped onion
2 tbsp. minced jalapeno peppers
4 oz. diced green chilies
1 tsp. salt
3/4 tsp. cumin
1 lg. clove garlic, crushed
Combine all ingredients in medium bowl. Chill before serving with chips."

FAMOUS HOMEMADE SALSA
1 lg. can peeled tomatoes (drained & pureed)
1 can stewed tomatoes
1 can Brooks made for Chili Tomato Sauce (med.)
1 can Brooks made for Chili Tomatoes (med.)
1 can tomato sauce
1/2 c. vinegar
1/2 c. sugar
1 whole stalk celery
3-4 green peppers
3-4 yellow onions
3 bunches green onions
Banana peppers or red peppers in season
Jalapeno peppers to taste (5 or 6 is mild)
Cut up vegetables. Mix all ingredients. Cook on low heat until vegetables are tender. Refrigerate.
Makes 4 quarts.

Salsa
2 gal. Tomatoes, peeled and crushed
3 cups Bell Pepper, seeded and chopped
2 cups Onion, chopped
1/2 cup fresh Cilantro, chopped
1/2 cup Parsley, chopped
2 tbs. Garlic, minced
4 Hot Peppers, seeded and chopped (optional)
1/2 cup Sugar
1 cup Apple Cider Vinegar
2 tbs. Black Pepper
1/4 cup Salt
Combine all ingredients and simmer until desired thickness is achieved. Ladle into sterilized jars and process pints 25 minutes in a boiling water bath.

Aloha Salsa:
1 cup finely chopped fresh pineapple
1 cup chopped peeled mango
1 cup coarsely chopped red bell pepper
1 cup cubed peeled kiwifruit (about 3)
3/4 cup chopped red onion
1/3 cup minced fresh cilantro
2 tablespoons lime juice
2 teaspoons chopped seeded jalapeño pepper
Combine all ingredients in a bowl. Cover and chill for 2 hours.
Yield: 4 cups (serving size: 1/4 cup)

1 1/2 tsp. olive oil
Salt and fresh ground pepper, to taste
Combine all ingredients in a small bowl, cover and refrigerate for 12 to 24 hours.
Makes about 1 1/2 cups salsa.

the key ingredient is cilantro.
add tomatoes, onions(if you want, i don't), green peppers, jalepeno peppers, cilantro (sparingly), and tomato paste to thicken it up a little. You could add guacamole if you want to.
slice everything up uniformly and toss together. should be very chunky and delicious.
*for an added kick, squeeze some fresh lime into it. Not only will it taste good, it will keep your ingredients fresher longer.
