I just need a quick easy recipes that is simple.
on hand... I have ground beef, bread crumbs, eggs, onion, soy sauce,.... some other stuff too. Any help?

Ingredients
Cheesy Meat Loaf

1 egg, slightly beaten
3/4 cup soft rye bread crumbs (1 slice)
3/4 cup shredded provolone or mozzarella cheese (3 ounces)
3 tablespoons beer, milk, or water
2 tablespoons purchased pesto
1/4 teaspoon ground nutmeg
1/4 teaspoon pepper
1 pound lean ground beef
Sliced provolone or mozzarella cheese (optional)

Directions
1. In a large bowl, combine egg, bread crumbs; cheese; beer, milk, or water; pesto; nutmeg; and pepper. Add ground beef; mix well. Form into a loaf, and place in an 8x4x3-inch loaf pan.

2. Bake in a 350 degree F oven for 45 to 50 minutes or until meat is done (160 degree F).

3. Remove from oven. Transfer to a platter. If desired, diagonally halve slices of provolone or mozzarella cheese. Place three cheese triangles on top of meat loaf. Let stand for 5 minutes before slicing. Makes 4 servings.

Test Kitchen Tip: For safety's sake, ground meats (pork, veal, or beef) need to be cooked to 160 degree F; ground poultry (chicken or turkey) should be cooked to 165 degree F. An easy way to check the temperature of ground meat dishes is to use an instant-read thermometer. Insert the thermometer about 1/4 inch into the loaf for 10 seconds.

The best my mom used to make(when I was a kid and ate that stuff). First, use a little V-8 juice in a bowl[1/4 cup] and use oatmeal instead of bread crumbs. Beat in one egg per pound of lean meat and mince half an onion. Also use just a tablespoon of minced green pepper if you like it, otherwise leave it out. Make sure you put in some garlic[according to your preference]. I would not use soy sauce as it tends to burn and be too salty. You can also use a little rosemary to get the pot roast attitude, and paprika is good, too. And make sure you "pack" it together well so it will be firm when it's cooked. I suggest you make the loaf smaller than the inside of you pan so the grease will have somewhere to go. After it's been cooking about 30-40 minutes check it and CAREFULLY drain the grease so it will be firm and not gross when you are ready to serve it. If you like the baked red stuff on top don't put it on until the last 15-20 minutes and use tomato sauce or paste instead of ketchup. Personally I like mustard better and give my guests/family the option. Use a 375 degree oven for one hour, give or take depending on size. [Hint-if you want to make a bigger one so you have some leftovers for sandwiches-use a cast iron skillet, shape the loaf into a slightly flattened ball and reduce the heat to 350 so the bottom won't get too hard] Roast some potatoes, carrots and onions in a separate pan and have a nice dinner. Let me know how it turns out :)

Ingredients:-

-2 eggs
-2/3 cup milk
-3 slices bread
-1/2 cup chopped onion
-4 oz of shredded cheese
-1 teaspoon salt
-1/4 teaspoon of black pepper
-1 1/2 lean ground beef

Method:-

TOPPING:
-1/2 cup tomato sauce
-1/2 cup brown sugar
-1 teaspoon mustard

1) Beat eggs.
2) Add milk and bread and let stand until bread absorbs liquid. 3) Stir in onion and cheese.
4) Add ground beef.
5) Mix well.
6) Shape into a loaf.
7) Bake at 350 degrees for 45 minutes.
8) Combine topping and spoon over meatloaf after about 30 minutes.
9) Spoon topping over meatloaf every 10-15 minutes while meatloaf is cooking.

My son loves this meatloaf. The Best Sweet and Sour Meatloaf! Ingredients: 1-1/2 pounds ground beef 1 cup dry bread crumbs 1 teaspoon salt 1/4 teaspoon pepper 2 eggs 1 teaspoon instant minced onion 1 15 ounce can tomato sauce, divided in half Topping: Reserved half of tomato sauce 2 tablespoons brown sugar 2 tablespoons vinegar 1/2 cup sugar 2 teaspoons prepared mustard 1 teaspoon instant minced onion 1-15 ounce can tomato sauce, divided in half Instructions: Mix together beef, bread crumbs, salt, pepper and eggs. Add onion and one half of the can of tomato sauce. Form into a loaf in a 9"x5"x3" pan. Bake at 350 degrees for 50 minutes. In a saucepan, combine topping ingredients and bring to a boil. Pour over meat loaf, and return to oven for 10 minutes more.

Bubba, for a small loaf of meatloaf, i lightly spray or grease the inside of a 9x5 pan and preheat the oven to 350* Then i take about 1 1/2 to 2 Lbs. of ground beef, 1/2 cup chopped finely onion, 1 egg, 1 cup of ketchup, salt and pepper to taste ( I use 1 teaspoon salt and 1/4 pepper.) and about 1-1 1/2 cups crushed saltine(soup) crackers. Mix this all together and put into pan and bake for 50 minutes. Take out of the oven and spread on top of this 1/2 cup ketchup, 1 teaspoon yellow mustard and 1/2 cup brown sugar and put in the oven for another 10-15 minutes until bubbly and browned. Take out, let sit for 5 min. , then cut into serving pieces. Hope this helps. My family loves this.

2. In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 5x9 inch loaf pan, OR form into a loaf and place in a lightly greased 9x13 inch baking dish.
3. In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
4. Bake at 350 degrees F (175 degrees C) for 1 hour.


I like mine w/out the mustard

Herb-and-Veggie Meatloaf:

Prep: 20 min., Cook: 7 min., Bake: 1 hr., Stand: 10 min. For an equally flavorful, lower-fat version, try the Herb-and-Veggie Turkey Loaf. Shorten prep time by using jarred minced garlic and preshredded carrots, which you can also use in Salad With Red Grapefruit-Lemon Vinaigrette. Pair meatloaf with your favorite refrigerated or frozen mashed potatoes prepared with reduced-fat milk.

1 medium onion, chopped
1 teaspoon minced garlic
2 teaspoons canola or vegetable oil
1 cup shredded carrots
1 cup roasted garlic-and-herb pasta sauce, divided
1 1/2 pounds extra-lean ground beef
8 ounces 50%-less-fat fresh pork sausage
1 (10-ounce) package frozen chopped spinach, thawed and drained
1/2 cup uncooked regular oats
2 teaspoons Italian seasoning
1 1/4 teaspoons salt
1 teaspoon pepper
1 large egg, lightly beaten
Vegetable cooking spray
Additional roasted garlic-and-herb pasta sauce (optional)

Sauté onion and garlic in hot oil in a large nonstick skillet over medium-high heat 3 minutes. Add carrots, and sauté 3 to 4 minutes or until onion is tender; cool slightly.

Mix all of your ingredients except soy sauce; add Worcestershire and/or ketchup, bbq sauce, or tomato sauce (or soup) instead. Shape to a somewhat flat loaf and cook on 350 for about 45 minutes, no more or it dries out which is why lots of people don't like it. Mmmm, sammiches tomorrow...I'll be there 'bout noon!

OLD FASHION MEATLOAF

INGREDIENTS:
1 tablespoon vegetable oil
2 ribs celery, chopped
1/2 cup chopped onion
1 1/2 pounds lean ground beef or 1 pound lean
ground beef and 1/2 pound ground pork
3/4 cup oats, quick or old-fashioned
1/4 cup chili sauce or ketchup
1 tablespoon Worcestershire sauce
1 1/2 teaspoon salt
1 large egg, beaten
3 tablespoons water or milk

PREPARATION:
Heat oil in a large skillet over medium heat. Add chopped celery and onion; cook, stirring, until tender, about 7 to 9 minutes.
In a large bowl, mix ground beef or beef and pork mixture, oats, chili sauce or ketchup, Worcestershire sauce, salt, beaten egg, celery and onion mixture, and the water or milk.

In a 13x9-inch baking pan, shape meat mixture into a 9x5-inch loaf. Bake at 375° for 1 hour. Using 2 spatulas, carefully move meat loaf to a serving plate and slice.
Serves 6 to 8.

Tips and flavor-enhancing ideas:
*For more flavor and a juicier meatloaf, add about 1/4 cup of tomato juice, wine, or broth for each pound of meat.
*Bake in muffin tins or mini-loaf pans for individual servings.
*Use leftovers sliced in sandwiches or crumbled in sauces or chili.
*Replace some of the liquid in the recipe with red wine or dark beer.
*Add a cup of grated or shredded cheese to the meatloaf and top with more cheese about 10 minutes before it's done.
*Replace liquids with red wine or dark beer.
*Make the finished meatloaf extra fancy by frosting with mashed potatoes and topping with cheese; return to the oven and cook until the cheese is melted.
