What are fast things that I can make for me and my man? We do a lot of chicken, pork chops, Lipton Noodles (those side dishes) and green beans......any other fast cooking tips and recipes?

We usually cook ourselves dinner on Sundays and we prepare several things that we eat later in the week. We are messing up the kitchen anyway so cook multiple dishes while you have the oven on or grill fired up.

For example if I grill something, I'll throw a few extra chicken breasts and sirloin steaks on the grill too. Put them in a ziplock in the fridge for cold salads, add to soups, noodle dishes, pasta with sauce, etc.

If you like rice, it freezes well, always cook a big pot and freeze the leftovers in ziplocks or tupperware. Then just dump one in the wok (or frying pan) with the chicken breasts cut up, toss in some pre-cut asian veggies out of the bag and some asian sauce (there's a whole lot of variety in the grocery). Stir it around for 10 minutes and serve!

Also, we do NON-BORING sandwich night Wednesdays. Buy crusty french or itanian breads, good coldcuts, cheeses and an assortment of spicy or exotic condiments. Think Panini. It's easy to grill panini in a regular non stick pan and you can make them better that most anyone. Look up ideas on the net.

Soups can be made easy and you can make them very chunky and hearty.
Here's my Cheater Tortilla Soup:
1 can Chicken broth (low sodium preferred)
1 can beef broth
1 can Salsa Casera (chopped up tomato, onion and peppers)
1 or 2 chopped up chicken breasts
Any onions, carrots, peppers, squash that you have, chopped, throw them in there. Simmer in one pot for 15 mins.
Add cilantro torn up in pieces. Pour in bowls. Break up Tortilla chips on top, add shredded cheese, serve.

Cheesy Chicken Pot Pie
1 1/2 cups chicken stock
1 cup cooked, shredded chicken meat
3/4 cup green peas
1/3 cup diced celery
1/3 cup diced carrots
1 1/2 cups shredded Cheddar cheese
2 tablespoons cornstarch
1/4 cup milk
1 recipe pastry for a 9 inch double crust pie

In a medium saucepan combine the stock, chicken, peas, celery and carrots. Bring to a boil. Mix cornstarch with milk and stir into stock mixture. Cook stirring constantly for 5 minutes. Remove from heat and let cool for 1 hour. Preheat oven to 325 degrees F (175 degrees C). Stir cheese into filling mixture and pour into a 9 inch pie crust. Top with second crust, seal edges and cut slits in top crust. Place on a cookie sheet and bake for 35 to 40 minutes or until top crust is golden brown.

I have a husband, 2 kids and a very hectic schedule so I understand fast and easy.............

sloppy joes and french fries
Hamburger Helper
Hot dogs
Spaghetti ( we brown hamburger in electric skillet and then add a jar of ragu and let it simmer while the noodles cook)
Frozen fish fillets ( Mrs Pauls are the best)
The crock pot beef stew (you get in the freezer section. has everything you need. put it on in the morning and bake some canned biscuits when you get home)
Hot pockets
Frozen lasagna with a salad. ( I thaw it while I am at work so it will cook faster)

On sundays I usually make a very large meal so there are left overs for reheated plates on Monday and Tuesday.

You can empty your refrigerator and have a big salad using any or all of the following:

lettuce, cucumber, red or green pepper, sliced hardboiled eggs, canned tuna or shredded/sliced/diced meat from the leftover chicken, crumbled blue cheese or grated parmesan cheese or ricotta cheese.

Make a quick vinaigrette by opening a bottle of Paul Newman's or mixing vinegar/lemon juice, extra virgin olive oil, salt, pepper, garlic powder.

And - since the entree is served cold, start with a nice hot "home prepared" soup made up of 2 different flavours of canned soup (to give it that uniqueness) and slice and toast up some gourmet style bread or rolls (or whatever is leftover in your freezer).

This not only gives you a quick and tasty meal but helps you clean out the vegetable bin in your refrigerator!

I love to make "Hobo Dinners". You take hamburger patties place them in a casserole dish top it with a can of cream of mushroom soup, potatos, onions and carrots, then cover with foil. Cook at 400 degrees for about 20-30 minutes. I use canned potatos and carrots because they cook so much faster.
If you aren't a red meat eater, you can use chicken and cream of chicken soup instead. They are both really good. It is great over some biscuits too :-)

SO fast so yummy!

12 ounces pasta, i used rotelle
1 (12 ounce) jar roasted red peppers (drained)
1 container garlic & herb spreadable cheese

Cook pasta according to package directions.
Meawhile puree red peppers in blender or food processor.
Add peppers and cheese spread to drained pasta and over low heat stir until cheese is melted.

Make this all the time

1/4 cup butter or margarine
1/2 cup finely chopped onions
1 clove garlic, minced
1 1/2 lbs sirloin steaks, cubed
2 tablespoons flour
1 (8 ounce) can mushrooms
1 teaspoon salt
1/4 teaspoon pepper
1 (10 1/2 ounce) can condensed cream of chicken soup
1 (10 1/2 ounce) can condensed cream of mushroom soup
1 cup sour cream
2 tablespoons parsley, finely chopped (optional)

In a large skillet melt the butter Saute the onion and garlic until transparent Add the meat to brown and mix well Stir in flour, mushrooms with liquid, salt, pepper, and soups Heat throughly Stir in sour cream and heat.
DO NOT ALLOW TO BOIL Serve over noodles or rice and garnish with parsley if desire.

Chicken Parmesan
Serves 6

1/3 Cup Parmesan cheese, grated
1/4 Tsp Italian Seasoning, crushed
6 (4 oz) Chicken Breast, boneless, skinless
1 Tbsp Unsalted Butter
1/2 Cup White Onion, diced
1 Tbsp All-Purpose Flour
1/2 Cup 2% Milk
1 (1 oz packet) Ranch Flavored Salad Dressing Mix
6 Slices Mozzarella Cheese
1/2 (10 oz pkg.) Spinach, frozen, thawed, drained
1 Tbsp Pimiento, chopped

Instructions:
Preheat the oven to 350ºF

In a small mixing bowl combine cheese, ranch salad dressing mix, and Italian seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside. Arrange the pieces in an 8x8x2-inch baking dish. In a small saucepan cook onion in hot margarine until tender.

Stir in flour; add milk all at once. Cook and stir till bubbly; stir in drained spinach and pimiento. Place a slice of cheese and spoon the spinach mixture over the chicken; sprinkle with remaining cheese mixture. Bake, uncovered, for 30-35 minutes or until tender.

Chicken Pasta Alfredo
Serves 6

6 Qts Water
12 oz Fettuccine Pasta
2 Tbsp Peanut Oil
6 (4 oz) Chicken Breast, boneless, skinless
2 (10-3/4 oz can) Cream of Mushroom Soup
1 (20 oz bag) Frozen Broccoli Florets
3/4 Cup Parmesan Cheese, grated

Instructions:
Heat a large pot of water, over high heat. When water comes to a boil add the pasta and boil for 8-10 minutes. Drain; reserving 2 cups pasta water. Cut the chicken into strips (1/4''x1''); set aside.

In a large frying pan, over medium-high heat, add the oil and chicken pieces stirring frequently until golden brown.

In a medium saucepan, over medium heat, add the chicken pieces, sauce, 1/4 cup reserved pasta water, stirring frequently. Add the remaining pasta water into the saucepan and bring just to a boil, then add the broccoli. Cook for 1-2 minutes. Remove from heat.

Divide the cooked pasta evenly between serving dishes and top with chicken and broccoli mixture.

Main Dishes
Gravy Baked Pork Chops
Serves 4

4 (1-1/4 inch thick) Pork Chops
1/2 Tsp Salt
1/4 Tsp Freshly Ground Black Pepper
1 Tbsp Unsalted Butter
3/4 Cup 2% Milk
1/4 Cup Water
1 (10-3/4 oz can) Cream of Mushroom Soup

Instructions:
Preheat the oven to 350º F.

Season pork chops with salt and pepper to taste. Melt the butter in a large skillet over medium high heat. Sauté the pork chops in the butter for about 5 minutes per side.

In a separate medium bowl, combine the milk, water and soup. Place the pork chops in a 9x13 inch baking dish and pour the soup mixture over the chops.

Bake for 45 minutes. Serve immediately.

I like to take, bottled alfredo sauce add frozen chicken and heat. While the sauce is warming, boil water and cook noodles, pour the sauce of the drained and cooked noodles add a salad on the side, you have a meal that took about 20 minutes.... Big hit at my house....

This dish is an old traditional dish from one of the cultures picked up during travels. Take some experimenting as this goes by feel rather than calibrated. Great for winter and one that can cook over night into the following evening.

Required: Slow cooker on low heat with enough water to cover close to an inch to the top. You can start the cooking in the morning or as early as the night before you hit the sack.

Add after adding main ingredient:
Place in a bag if the preference is not to eat spices: (hotness)
Whole white pepper seeds: approx. one table spoon or more.
Whole black pepper seeds: approx. half table spoon.
Dry Ginger: three to five thin slices.

Separate:
Whole Star aniseeds: approx. two to five. (Too much makes it taste like medicine.)
Cinnamon: one to two sticks, preferably slightly cracked by dry cooking in a hot pan with little or no oil before adding to water to help release the flavour.
Peeled almonds: one to three hand fulls of halved almonds.
Light soya sauce: A tablespoon full. Reduce if more salt added.
Dark soya sauce: Half tablespoon full. (The sweet kind in lieu of sugar.)
Sea salt: A tablespoon full. Reduce if more soya sauce added.

Add frozen to cook 20 to 30 mins Before adding spices. Do not cook thoroughly so as to let spices seep in.
Thick Pork slices: two to five with thin slices of fat that you may choose to remove later. Wash pork if necessary. Beef works too although its kind of extravagant. Use the fatter cuts.

Add:
Whiskey or cognac: one to two tablespoon full on the last hour of cooking.
Other additions:
Sliced onions, dash of garlic, easy on the vegetables like leeks, parsely, carrot slices, spring onions.

Recap:
Low heat slow cooker: minium 6 hours, the longest tried is two days with additional herbs and spices.
Caution:
Make sure your fuses do work or use a timer just in case. When cooking the first time, try it over the weekend.

Correctly cooked, the reward is a tasty soup base with tender meat. Serve with warmed baguette or brown rice. Bon chance !

You could try what my husband calls Kel's Famous Dish. (Obviously his favorite)

1 package thin spaghetti noodles
1 pack boneless skinless chicken breasts (just a small pack will do)
1 can cream of mushroom soup
1 can cream of chicken soup
1 can carnation evaporated milk (large can)
grated cheese ( i use a mixed italian cheese)

Boil chicken and when it is done cut it up
boil noodles
mix together both cans of soups and can of evaporated milk. add chicken, and eventually noodles. put in a baking dish and sprinkle cheese on top.
Bake about 15-20 minutes on 350.

This recipe is really easy and really yummy!!!
