Welllll. Here we go!
For string beans, you can just used them as vegetables by them seves or add them as a side onto anything. They go with most main entrees :-) Add them to stew, sautee them with onions & garlic, make a casserole :-)
Now for the carrots:
Carrots, great for stew. Also cook them with spices & sugar [i know, it's weird] but it comes out great! And go ahead and make yourself a carrot cake! Here are some websites with recipes:

If you eat too many carrots you can actually get vitamin A poisoning. A whole bunch of North Pole explorers died from that when they ate polar bear liver which has 10000% of the USDA recommedad allowance for Vitamin A. 1 carrot has about twice the Vitamin A you need for a day.
Anyway, I love carrots and here are my fav recipes
Carroat and red pepper slaw.
2 cups each Chop these really fine, or sclice them thin. Either way, just make sure that they are small pieces. Steam them very briefly
Add juice of a limeTBSP of Mayo
Pinch of Cayenne
tsp of tarragon
tsp of celery seed
salt and pepper
mix and serve over fried fish or a pork chop
Carrots and apple pie
Make an apple pie, except Sub in 1/2 the apple for carrot. (sounds nuts but its good
Carrot juice:
in a juiceer, add a carrot and half a melon
Awesome
I also like in the juicer 1 carrot, 3 apples and a banana
I dont care for the beans so much, so ne help there. good luck and happy eating

Heat up a can of beef broth with some chopped green onions and a can of chestnuts. Let simmer about a minute and then add the cans of green beans. Drain before serving.
The taste is refreshingly different.
For the carrots:
Warm up with some butter and brown sugar and serve along with ham.
Also, you can use some of the canned carrots in carrot cake recipes.
Perhaps you can "juice" the carrots in the blender along with other fruits for a healthy and high fiber "fruit smoothie".
