I like the word "Oriental", here are 2 very simple and traditional Chinese salad recipes.

<<<<<<<< Bean Sprouts Salad >>>>>>>>

300g green bean sprouts, remove discoloured ends
30g white sesame seeds, toasted
1 small red chilli, seeded and sliced
a pinch of salt
2 tablespoon sesame oil
1 teaspoon of Chinese rose wine or dry white wine or sherry
1 clove garlic, crushed
chicken stock

1) Boil bean sprouts with chicken stock till cooked, drain well.
2) Heat a frying pan on low heat, toast sesame seed till light brown, crispy. Remove from heat.
3) Heat sesame oil over low heat, cook garlic in the oil for 1 minute or till slight brown.
4) Mix salt, sesame oil, wine, bean sprouts and sesame seed in a bowl, toss to combine, sprinkle chilli on top and chill for 1 hour before serve.

<<<< Chinese Crunchy Cucumber Salad >>>>>>>

4 Lebanese cucumbers
2 tablespoon of sea salt
2 gloves of garlic, minced
2 tablespoon of sesame oil
1 tablespoon of rice vinegar
1 teaspoon of sugar

1) Put cucmbers and salt in a big zig bag, rub cucumber with salt about 1 minute, set aside for 15 minutes.
2) Risen the cucumbers with water, cut cucumbers into 2 inches in length, put into a new zig bag, crush cucumbers with chopping board (slightly crack them), place cucumbers on plate.
3) Mix garlic, vinegar, sugar and sesame oil well and pour on cucumbers.

<<<<<<<< Thai Pomelo & Shrimps Salad >>>> Serves 6

1 pomelo or grapefruit (sweet ruby red)
500g big shrimps, shell, devien and boiled
1 teaspoon red Thai chili (small), chopped
1 tablespoon Fish sauce (nam pla)
1 teaspoon sugar
1 fresh lime juiced
Some lettuce leaves
1 tablespoon fresh coriander, chopped
2 tablespoon crispy fried shallot flakes (method, see below)
60g roasted peanuts, chopped

Pomelo looks like a thick-skinned, oversized grapefruit, and it is sweeterthan the normal grapefruit.

1)Peel and separate pomelo segments, remove and discard membranes. Gently flake the flesh. If using grapefruit, drain excess juice. Chill.
2) In large bowl, combine pomelo and cooked shrimps, mix together the chopped red chili with fish sauce, sugar and lime juice; toss with pomelo mixture.
3) Arrange on a bed of lettuce, garnish with coriander leaves, peanuts, and 2 teaspoons of the crispy fried shallot flakes.

<<< Crisp Fried Shallot Flakes >>>>
6 shallots, thinly sliced
1 cup olive oil (or cooking oil)

1)Slice shallots into thin slices, be sure they are all the same thinness to ensure even cooking.
2) Heat a pan with thevegetable oil over low heat. Add shallots and fry slowly until browned and crisp, about 5 to 10 minutes. The moisture in the shallots should be completely cooked out.
3) Drain on paper towel. Stored in an air-tight container, the shallots will keep several weeks

Well that depends. A good Japanese salad is namasu. Take a seedless cucumber & carrots, finely slice very thinly, then rub with salt. Let set for 20 minutes every once in a while squeezing out the water that comes out. Do this seperatly or your cucumbers will turn orange. Then make a dressing of soy sauce, sugar, mirin, rice wine vinegar and sesame seeds. Boil dressing till sugar is dissolved. Add bean sprouts, toss with your other vegetables and dressing. You could also add aburage (deep fried tofu) The recipe sounds simple but the results are outstanding.

Applebee's Oriental Chicken Salad Recipe

Oriental Dressing

3 tablespoons honey
1 1/2 tablespoons rice wine vinegar
1/4 cup mayonnaise
1 teaspoon Grey Poupon Dijon mustard
1/8 teaspoon sesame oil

Salad

1 egg
1/2 cup milk
1/2 cup flour
1/2 cup corn flake crumbs
1 teaspoon salt
1/4 teaspoon pepper
1 boneless, skinless chicken breast half
2-4 cups vegetable oil (for frying)
3 cups chopped romaine lettuce
1 cup red cabbage
1 cup Napa cabbage
1/2 carrot, julienned or shredded
1 green onion, chopped
1 tablespoon sliced almonds
1/3 cup chow mein noodles

1. Preheat oil in deep fryer or deep pan over medium heat. You want the temperature of the oil to be around 350°F.

2. Blend together all ingredients for dressing in a small bowl with an electric mixer. Put dressing in refrigerator to chill while you prepare the salad.

3. In a small, shallow bowl beat egg, add milk, and mix well.

4. In another bowl, combine flour with corn flake crumbs, salt and pepper.

5. Cut chicken breast into 4 or 5 long strips. Dip each strip of chicken first into egg mixture then into the flour mixture, coating each piece completely.

6. Fry each chicken finger for 5 minutes or until coating has darkened to brown.

7. Prepare salad by tossing the chopped romaine with the chopped red cabbage, Napa cabbage, and carrots.

8. Sprinkle sliced green onion on top of the lettuce.

9. Sprinkle almonds over the salad, then the chow mein noodles.

10. Cut the chicken into small bite-size chunks. Place the chicken onto the salad forming a pile in the middle. Serve with salad dressing on the side. Makes 1 dinner-size salad.

Open a bag of pre-washed and pre-cut Romain Lettuce, pour out into a salad bowl, and toss with any commercially available "Ginger & Sesame Seed" dressing.

Optional:
* add some segments from a can of mandarine oranges
* add some strips of cold grilled chicken breast
* add fresh toasted sesame seeds (yum!)
