I was given a fresh pineapple and I have no idea how to peal it or slice it....I have always gotten canned fruit in the past...;-)
Also, I'd like a few suggestions and recipes please.....Thanks!

All you need is a long sharp knife to cut the fruit in half, and a short serrated knife to cut away the shell.

Cutting in half is the first step in preparing fresh pineapple. It's easy, just use a long, sharp knife, start from the bottom and cut through the leafy crown.

Begin by cutting around the fruit about one-half inch from shell. Use a short, serrated knife for this job. When the fruit is removed, you can use the empty pineapple shell as a serving dish, also called a Pineapple Boat.

CREATE A PINEAPPLE OUTRIGGER:
1) Cut the halved pineapple into quarters. Use a long, sharp knife and cut from the bottom to the leafy top.

2) Trim away the hard core of pineapple using a short, serrated knife. With the same knife, cut away the fruit from the the shell, but leave the fruit in place.

3) Cut the fruit in half, lengthwise, using your long knife. Then cut the fruit crosswise into many bite-size pieces.

A special note about "fresh" pineapple:
Fresh pineapple contains bromelain, a protelytic enzyme that breaks down protein in a manner similiar to what happens in digestion. Because of this:
Gelatin made with fresh pineapple won't set and
cottage cheese, sour cream and other dairy products should not be mixed with fresh pineapple until just before serving.

BUT...you can use fresh pineapple to great advantage in a meat marinade to add a flavor accent and help tenderize less tender cuts of meat.

1. Twist out the top. The top may be planted if you want a 4' (1.2m) diameter thorny bush that requires a couple years of frost-free weather. You'd also get a tall stalk, covered in lovely blue flowers, that turns into a pineapple.

2. Slice away the skin. The best tasting pineapple is right under the surface, so don't cut too deeply.

3. Carve out the "eyes". These flower holes contain enzymes that can cause mouth irritation; they digest you a little bit. (pineapples can get revenge)

4. Slice the pineapple the long way. Make 6 to 12 (8 is easy) wedges with the core along one edge of each wedge.

5. Cut the core away from each wedge.

6. Chop up the wedges as desired. The bottom part is sweetest and most likely to be spoiled

I slice the bottom and top off first, then stand the fruit up on the cutting board. Run your very sharp knife down the sides, removing the peel. Then cut it as you wish. Most people also remove the innermost "core" type layer, by cutting into quarters lengthwise, and slicing the core off.
Fresh pineapple is absolutely delicious. Although be sure to eat it within a day, as it goes bad quickly, even in the fridge.
For a recipe, I always just add pineapple chunks to a stir fry or something. Enjoy!

using a decent sharp chef's knife 8-10"
cut off top
cut off bottom
stand up pineapple
using the tip and the front 1/3 of the blade cut downward following the contours of the fruit .while making sure that you remove the eyes
When the skin has been removed
cut in1/2 top to bottom
lay halves flat and cut them into long quarters or thirds depending on your needs
turn the pineapple spears over and using the tip of your knife remove the core by slicing horizontally
This is the standard method for cutting an peeling almost any fruit or vegetable

Pineapples are a real pain to Peel, worse than a turnip. You need a really big sharp knife and it's scary. I don't bother. Stick to canned. If you chop of the top (Greens) with a small amount of pineapple--say an inch of pineapple, stick it in a planter pot with some earth , water it and will grow, makes a real nice plant and conversation piece. Best of all you only have to make one cut. (Ditch the rest) As for recipes, pineapple upside down cake is a classic and real easy. A crisp is super easy and yummy too.

To cut pineapple into chunks, twist off the crown, then slice the pineapple lengthwise into quarters. Cut away the shell from each quarter, then remove the core strip from the top. Slice into chunks.

When you shopped for your first fresh pineapple, you should have had the produce people tell you what to do with it and get recipes from them..most supermarkets will offer that service freely, so you can still call them back and ask for help. Next time you want to try something new like a fruit or vegetable, get the info before you leave the store.

You need to take off the spiny top - and then cut all the rough yellow sides off of it. You will be left with something that looks like a tiny keg - and you can either cut it lengthwise (and get little tidbits) or widthwise and get little "circles". Be very careful not to cut yourself - because depending on the ripness of the fruit it can be difficult to cut.

Cut the top off.. and slice it downthe sides to get the rough off. Then slice it. Core it because the core isn't tasty
