lookng for pumpkin pie recipes and any other good tasting recipes. i have looked at several websites but i have made most of the recipes i find. anyone know anyone know any good ones?

My Mother's recipe.......

OLGA's PUMPKIN PIE:
1 cup sugar
1/2 teaspoon salt
1 1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1 1/2 cups pumpkin puree, canned or fresh
1 (12oz.) can evaporated milk
2 eggs, lightly beaten
1 unbaked pastry shell (9-inch)
Combine sugar, salt, and spices in a large mixing bowl. Add pumpkin, evaporated milk, and eggs; mix well. Pour into pastry-lined pie pan. Bake at 425 degrees for 15 minutes; reduce heat to 350 degrees and bake 40 minutes or until center is set.

1¼ hours 15 min prep
Change to: 9inch Pie US Metric
1/8 teaspoon salt
2/3 cup sugar
2 teaspoons pumpkin pie spice (**see variation)
2 eggs, slightly beaten
1 2/3 cups milk
1 1/2 cups mashed cooked pumpkin
1/2 recipe plain pie pastry
Sift dry ingredients together and stir into eggs.
Add milk and pumpkin.
Line piepan with pastry and pour in filling.
Bake in very hot oven (450 degrees) for 10 minutes; reduce temperature to slow (325 degrees) and bake 35 minutes longer or until knife inserted in center comes out clean.
Cool.
**Variation:Use 1 Tsp.
cinnamon, 1/4 Tsp nutmeg 1/2 Tsp ginger and 1/8 Tsp ground cloves instead of pumpkin pie spice.

Pre heat oven 350F
1 can pumpkin
2 egg
1-2 tsp cinnamon
1/2 clove
1 tsp ginger
1/4 tsp nutmeg
1 can Sweetened condensed milk
In large mixing brown
Beat eggs add and mix pumpkin in
Dump the rest of the ingredients in and beat well.
Place pie shell in oven pour pumpkin mix into shell
Bake 45 minutes or until knife inserted 1&1/2 inchs from crust comes out clean
I kind of made thiis up. You can expierment with the spices. This is what my family likes. Hope it works for you

Pumpkin Dutch Apple Pie

A candied layer of walnuts is broiled on top of the creamy pumpkin pie for an elegant version of this traditional holiday dessert. Sort of a Pumpkin Pie Brûlée for the pilgrim set!

1 9-inch deep-dish pie shell, unbaked
1 1/4 C coarsely chopped walnuts
3/4 C packed brown sugar
1 can (15 oz.) LIBBY'S 100% Pure Pumpkin
1 can (12 fl. oz.) CARNATION Evaporated Milk
3/4 C granulated sugar
2 large eggs, lightly beaten
1 1/2 tsp pumpkin pie spice
1/4 tsp salt
3 T butter, melted

Directions: PREHEAT oven to 425° F.

COMBINE walnuts and brown sugar in small bowl. Place 3/4 cup nut- sugar mixture on bottom of pie shell. Combine pumpkin, evaporated milk, granulated sugar, eggs, pumpkin pie spice and salt in medium bowl; mix well. Pour into pie shell.

BAKE for 15 minutes. Reduce temperature to 350° F.; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack.

COMBINE butter and remaining nut-sugar mixture; stir until moistened. Sprinkle over cooled pie. Broil about 5 inches from heat for 2 to 3 minutes or until bubbly. Cool before serving.

How about Pumpkin Streusel Dessert Squares

1 pkg. (9.2 oz.) JELL-O No Bake Pumpkin Style Pie
1 cup PLANTERS Walnut Pieces, toasted, finely chopped
5 Tbsp. margarine or butter, melted
2 Tbsp. sugar
2-1/2 cups cold milk


LINE 8-inch square pan with foil, with ends of foil extending over sides of pan. Mix Crust Mix, walnuts, margarine and sugar until well blended. Remove 1/2 cup of the crumb mixture; set aside. Press remaining crumb mixture firmly onto bottom of prepared pan, BEAT milk and Filling Mix in large bowl with electric mixer on low speed 1 min. Pour over crust. Sprinkle with the reserved 1/2 cup crumb mixture.
REFRIGERATE at least 1 hour or until firm. Lift dessert from pan, using foil handles, before cutting into squares to serve. Store leftover dessert in refrigerator

Buy Libby's canned pumpkin. Use the recipe on the can. Serve with real whipped cream made in a mixer.

Try making your regular pumpkin pie recipe. but instead use a chocolate wafer crust. it tastes so good, the pumpkin and chocolate together!

Applebutter Pumpkin Pie:
3 eggs
1 c pumpkin
1/2 c brown sugar
1 c applebutter
pinch salt
ginger, cinnamon, nutmeg to taste
evaporated milk
1 unbaked pie crust

Wisk eggs with pumpkin and brown sugar. Add applebutter and wisk again. Add seasonings. Wisk. Add evaporated milk. Pour into unbaked pie crust. Bake at 425 for 40 minutes.

Wild Berry Buckle:
1 1/2 c flour
1 1/2 TBS sugar
1/4 lb butter, chilled cubed
5 TBS cold soda water
5-6 c berries
1/2-3/4 c sugar
4 TBS butter
2 TBS bourbon

Put flour and 1 1/2 TBS sugar in food processor. Add chilled butter and process until mixture becomes crumbly. With processor running, slowly pour in soda water, mixing until mixture forms a ball. (if mixing by hand, cut butter into flour and sugar, slowly add soda water, mixing with fork) ***I did this all by hand and it came out just fine***
Press dough into a 4 inch circle, wrap in plastic wrap and refrigerate at least 1 hour. On a floured surface, roll out to fin a 9 inch round or 11x7 baking dish allowing a 2 inch overhang. Pour berries into crust. Sprinkle sugar over fruit and dot with butter. Drizzle bourbon over fruit. Fold edges of crust over fruot leaving center open. Sprinkle with sugar if desired. Bake at 425 for 45 minutes. Serve at room temperature with vanilla cream sauce.

Vanilla Cream Sauce:
3 TBS sugar
1 TBS cornstarch
1 c milk
1 egg yolk, beaten
1 tsp vanilla
1/2 c heavy cream

COmbine sugar and cornstarch in a saucepan and add milk. Cook and stir over medium heat until mixture thickens. Beat a small amount into egg yolks, stir. Then stir into hot mixture. Cook and stir 1 minute. Add vanilla and chill.
Whip cream and fold into cooled pudding.
