Carrot Soup

1 small onion finely chopped

3 C. carrots peeled and coarsely chopped

4-6 T. butter

3 C. chicken stock

1 1/2 C. heavy cream or milk

2 t. curry powder

salt and pepper to taste

Melt butter in large saucepan. Saute onions 5 minutes until transparent, then add the carrots. Cook for 5 more minutes and add stock. Cook another 20 minutes or until carrots are tender. Puree in the blender or if you want a very velvety texture, put through a strainer. Return the soup to the pan and whisk in milk or cream. Add seasonings and taste.

Garnish with creme fraiche and chopped parsley.

First off, you need a crock pot or a similar slow cooker. First, peel and cut one medium potato (large chunks) then cut one large onion into chunks now add enough peeled carrots to fill the crock pot. Cover with water and cook on low overnight. In the morning put all into a blender (this will take a couple times to do it all) and puree. When done add salt, pepper and curry powder to taste and there you have it.

are you talking a creamed carrot, or sliced? What type of base do you prefer (I recommend chicken or vegetable stock)?

I've finely processed carrots in my food chopper and added them to the stock to cook, then thickened it (adding preferred spices while it simmers). You can try that and see if you like the texture.
