It's high in Vitamin A. Iron also. Sometime ago a group of scientists got lost in the Arctic - their sled dogs died - they ate the liver of the dogs. It was reported because of the high doses of Vitamin A that the heels on the soles of their feet turned to mush. No, I don't know why - but they say that happened. Eat, drink and whatever in moderation.

Yes, moderation is always the best. The cholesterol thing has gotten out of control. Moderation is always the best. Don't deprive your body of a great source of natually ocurring vitamins and minerals. Here's a great article on liver:

It is very high in iron and vitamin A and also since it is an organ meat it is very high in cholestereol. I grew up on it and it is great but just don't overdo anything is the rule.

Iron, BUT, liver is an organ meat. Meaning, in this case, it cleans the body of toxins and impurities. So you are eating all the crap that the animal's body filtered out. Also it is extremely high in cholesterol.
