I can't STAND the taste of already made spaghetti sauce. It is fairly simple to make.

I use:
2 tbs. of cooking oil
1 large white onion ( chopped)
1 tsp (or so) of minced garlic

2 cans of stewed tomatoes (Italian Recipe)
1 can of crushed tomatoes (Italian Recipe)
No matter what size can you use the porportions above

1 or 2 tbsp Italian Seasoning (has oregono, basil, parsely, etc)
Salt, and Pepper to taste.

First heat the oil in a med-large pot on MED. Once the oil is hot, add the onion and garlic and saute until onion is almost transparent. Add the rest of the ingredients and cook an med-low for at least an hour. All measurements are approx. (I don't usually use recipes.)

If you would like to add meat, simple brown ground beef in a different pan, and add to sauce.

1 box lasagna noodles
1 med size container of ricotta cheese
1/2 cup grated parmesean cheese
1 large block of mozerella cheese (grated)
2 eggs
2 tsp italian seasoning

Instructions:

After sauce is ready, boil lasagna noodles until tender.

Combine parmesean and ricotta cheese with the eggs, and italian seasoning.

Use a deep caserol dish, and spoon a small amount of sauce into the bottom of the dish. Place 1 layer of noodles, mozerella cheese, ricotta mix, and sauce. Repeat until dish is full. Top with mozerella cheese.

Cook in oven at 400 degrees for 1 hour covered with foil (or until heated completly through.) Remove foil and cook for an additional 15 min until cheese is golden brown.

Do not serve right away. Let set for about 15 min.

Good luck and enjoy!!
Please forgive any spelling errors. Spell check was taking way too long!

Use the recipe on the Prince Lasagna noodle box, except where they say to add the meat to the Ricotta cheese, don't do that. Add it to the sauce.

This is one off of www.foodnetwork.com. It's really good and very easy!

1/3 cup olive oil
1 pound ground beef
1 teaspoon cracked black pepper, plus extra for coating beef
1 medium onion, chopped small
1 red pepper, chopped small
1 green pepper, chopped small
6 cloves garlic, minced
5 leaves basil, finely chopped, plus leaves for garnish
1 tablespoon fresh chopped oregano leaves
1 (14-ounce) can tomato sauce
1 small can tomato paste
2 teaspoon salt
1 box dry lasagna noodles
1 pint ricotta
1 cup grated Parmesan, plus extra for garnish
1 large ball fresh mozzarella, grated or sliced thinly
1 rustic loaf bread
1 tablespoon butter

Heat the oil in a large pot on high heat. Add the beef and coat it with pepper. Cook through, about 5 to 6 minutes. Remove the beef from the pot and add in the onions, peppers, 1/2 of the garlic, and herbs. Turn the heat to medium and cook the vegetables until soft. Add in the tomato sauce and paste. Season with salt and pepper and let simmer for 1 hour.
Bring a large pot of salted water to a boil.

Add the dry lasagna to the boiling water and cook until al dente. Remove and place on baking sheet coated with olive oil. Toss the pasta to coat it completely.

Preheat the oven to 400 degrees F.

In a bowl, mix the ricotta and Parmesan well. In a 9 by 12-inch baking dish, begin laying down the pasta. Smooth on a layer of the cheese mixture and spoon on meat sauce. Add another layer of pasta and repeat this process until you reach the top of the dish. The final layer should be cheese mixture and fresh mozzarella.

Cover with foil and place in the oven. Bake for 45 minutes. Remove the foil and let brown for 15 more minutes.

Cut the rustic bread in half and spread on butter. Add minced garlic, salt and pepper and wrap in foil. Bake until hot throughout. Unwrap the bread but keep it in the foil. Let crisp up and serve.

To serve, spoon on meat sauce on a warm plate. Place a large square of lasagna on the pool of sauce. Top with Parmesan and a basil leaf.

Probably my fav thing to cook,

In a pot saute 2 chopped onions and 4 cloves minced garlic in olive oil, add 2 diced green peppers and 1 and 1/2lbs ground beef. Keep stirring so it won't stick. When Ground beef is almost cooked add 1 pkg sliced mushrooms. Allow to simmer 2 minutes. Add 1 family size (64oz?) jar of Ragu tomato sauce (I like the chunky garden style). Add a couple tbsp of oregano, garlic powder, cayenne and onion powder. Let simmer. Make sure the bottom doesn't stick or burn!!

Meanwhile boil lasgne noodles in salt water, keep an eye on them they tend to stick! (depending on pan size figure 3 layers and maybe 3-4 noodles on each layer). Prepare per box directions.

Mix 2 eggs, 2 cups cottage cheese and a couple dashes of parsely and salt.

Mix 1 cup parmesan, 3 cups mozzarella.

Put sauce in bottom of pyrex dish, layer noodles to cover sauce, cover noodles with sauce, cover sauce with cottage cheese mix, sprinkle parm/mozz mix, cover with noodles, cover with sauce, cover with cc mix, cover with p/m mix, cover with noodles (either finish off with following or keep going til dish is full) cover with sauce cover with p/m mix.

Bake for 45 min at 450 until hot and bubbly. Serve with fresh garlic bread and salad.

Now I'm hungry!

1 layer of noodles on the bottom, layer of cheese (I use parmasean, feta and motzarella for my cheese layers) and sauce (roasted garlic sauces work best, nothing chumky!). Layer of noodles, then layer of meat, cheese AND sauce (cook your ground beef before hand with minced garlic & onions, salt and pepper to taste), layer of noodles, another layer of cheese and sauce on top. Do as many layers as you like! Don't forget to grease the bottom of your pan! (I do mine in an 8x8 inch pan). It doesn't hurt to have a little noodle overlaping the one next to it (it will serve easier if you do this). Good luck (the box of noodles actually has directions on a basic recipy, try following that and change it to match your tastes!).
