Passata

Crushed tomato blends that are used often as ingredients for Italian cooking. Passata is made from straining crushed ripe tomatoes with either a fine or coarse strainer to create a smooth or somewhat chunky blend, depending on the strainer texture. As an ingredient, passata is used to flavor soups, sauces and pasta dishes. Sugocase and Polpa are other varieties of Italian tomato products that are similar, but coarser in texture than Passata.

Salsa Di Pomodoro Passata (Smooth Tomato Sauce)
Ingredients

2 lb ripe tomatoes
1/4 c olive oil
1 lg onion, finely chopped
2 cloves garlic, minced
1 ts sugar
1/4 c fresh basil, chopped
1 salt and fresh ground pepper

Instructions

If using plum tomatoes, cut in half. If using large tomatoes, cut in
quarters. Place tomatoes in a non-reactive saucepan. Cover and cook
for 15 to 20 minutes or until soft. Once soft, pass tomatoes through
food mill and reserve puree in a bowl. Pour olive oil into a medium
skillet and set over medium heat. Add onion and garlic and saute for
2 to 3 minutes or until golden. Add tomato puree, sugar and basil.
Season with salt and pepper to taste. Cook until sauce is reduced and
thickened to your personal liking, about 5 to 10 minutes. Makes
about 2 to 3 cups.

Passata is a cooked tomato concentrate. In the case of the recipe you refer to, which calls for a small amount, you might prefer to substitute tomato paste rather than going to the trouble of making a batch of passata.

It is sieved tomatoes. It tastes like tinned plum tomatos and comes in a screw top jar. You generally find it near tinned tomatoes and tomato puree on a supermarket shelf. Sometimes it comes 'with herbs' or 'with garlic'. I as to to mince to make spag bol.
