This may sound a little cheesy, but my husband and I really enjoyed the large maze at the Dole plantation. There are coupons in the travel magazines that you get when renting a car or pick one up at the hotel. It was really fun and then after enjoy a pineapple dole whip or pineapple sundae!! Very Yummy! When driving by the plantation open the windows and enjoy the fresh aroma of pineapples. Delicious!
My husband and I were very disappointed that we never made it to Hanauma bay. We heard that there is great snorkeling there but, it fills up to capacity quickly and if you are not there early then you are turned away.
The flea market at the Aloha Stadium was very fun. This is a great place to pick up your souvenirs. You can try to talk them down in price.
My husband and I bumped into a place for food at a hotel down in Waikiki on the main strip, It was called Canoes' located on the water. Very beautiful and the food was delicious. A bit pricey, but we were excited to find out that they accepted the Entertainment Card which gives buy one get one free. They have mint lemon water, which doesn't sound all that great, but we could not get enough!
Have fun, and know that there are many of us that are jealous of you!!

You should definitely go to the polynesian cultural center although i must say that the luau wasn't what i expected, don't get the big package, you would be fine with the regular packet. Alot of people go to the center for the luau but seriously, the food was bland overall and not tooo tasty, if i could get my money back i would.
When you get to your hotel, you will find an activities center where they will give you more info based on what you would want to do while you are staying there and you can buy tickets to events and activities, some are even cheaper than online so you should wait on that.
Also, driving the whole island was breathtaking and stop every where you see a beautiful scenery and take pics. Don't forget to stop by turtle beach, beautiful turtles along the shore trying to eat the algae. Driving on Likelike Hwy taking the tunnel to Kane'ohe was beautiful as someone mentioned earlier and you will see the big difference from the windward side of the island to the leeward side of it. when it rains, its soooo romantic and breathtaking too.
I took the bus transit most of the time and let me tell you that it was really good and cheap. once in a while it was crowded, but if you can wait maybe like 3 or 4 min., another bus would pass by that was more comfortable. A four day pass costs $20, which is really reasonable.
Pearl Harbor and Diamond Head are both a must. As well as the Punch Bowl Swapmeet, open Wed, Fri, Sat, Sun. that is the best place to do your souveneir shopping for everybody on your list.
When it's time to spoil yourself, head to the Ala Moana Shopping Center where they have practically every store that you need, including Gucci, Prada, down to Old Navy and Forever 21, they have all you need.

Personally, I found Pearl Harbor to be very boring, but that is just my take.
Be sure to go to the Aloha Stadium Flea Market, either on the weekend or, I believe, Wednesday. It has the cheapest prices on souvenirs, T-shirts, etc. Cheap shuttles or The Bus from Waikiki. The aquarium on the Diamond Head side of Waikiki is nice. You must see the North Shore. The Polynesian Cultural Center is reasonably nice. Go to the Pali Lookout and hike for a short distance down the overgrown road going to the right off the lookout.
There are millions of things....

"When in Rome, Do As the Romans Do":
1) Try Ox Tail Soup at Kalihi Bowl (It's a cafe inside the Bowling Alley at Kahili Shopping Center)
2) Eat local food (Lau-Lau, Kalua Pig, Chicken Long-Rice, Lomi-Lomi Salmon) at Ono Hawaiian Foods on Kapahulu Avenue.
3) Hike to the top of Diamond Head (bring the camera for some breathtaking pics)
4) Snorkel at Haunauma Bay (early in the AM before it fills up with other tourists by 11AM)
5) Visit the Byodo Temple (feed the koi, and make an offering to Buddah to try hope for romantic evening)
6) If you are female: go visit USMC Station in Kane'ohe and ogle studs in uniform (beautiful drive thru LikiLike tunnel from Waikiki to Kane'ohe)
7) If you are male, send your partner in car to drive to Kane'ohe (see numbah 6 above) while you stay in Waikiki and stroll along da beach!
