Many years ago, one of my high school jobs was working for an ice cream store. The traditional "scoop" is 2.5 ounces by weight.

Newer stores are at 3 to 4.5 ounces per scoop by weight. The scoops sold in supermarkets and cooking stores will make a loose scoop of 'regular' ice cream that weighs about 3 ounces.

The trick is that different ice creams will have different amounts of air in them to give them a lighter mouthfeel. This air is called "overrun" in the business. The (usually) square boxxed bargain ice creams will have as much as 30% overrun, while premium ice creams will have 10% or so, and gelatos and some super premiums will have none.

The bottom line is that less air means the same sized scoop weighs more.

Make mine a double!

I would usually use an ice cream scoop, but if mine broke like they sometimes do I would use a regular spoon.
