Mineral oil... You might want to take it out and sand it well if there's any splinters, then recoat it w/ a good dose of mineral oil. Don't use vegitable as it can go bad and make your board stink.

Any good cooking shop (Williams-Sonoma, Sur le Table, etc.) should be able to supply food-grade mineral oil for seasoning your cutting board.
