okay now do this,
put it in foul and bake it like that to,
before you do that cut the top off and scrap out the insides and mix it with stove top stuffing,and then put the mix back insides of it and rap it in foul and put it on the grill and man oh man,
wow it's so good,you will make it over and over again.

That's very close to one of my summertime favorites -- season the eggplant slices, brush them with olive oil and cook them on a grill or barbecue. They get this wonderful smoky aroma and are sweet and tender, too.

I have been known to do what you describe, though, and then use that as the base for an "eggplant lasagne" -- it's not QUITE an eggplant parmigiana because I don't bread and fry the eggplant, but once you've got the slices lightly sauteed like that, layer them with red sauce and cheese and bake till everything's bubbly and delicious.

Three out of five of us in my family LOVE eggplant; I guess the other two will have to make do with ramen noodles... :-)

Here is another tasty way to make eggplant and a complete meal too. Mix up your favorite meatloaf recipe. Cut eggplant lengthwise and scoop out the center flesh and mash it up and mix it into the meatloaf mix. Stuff the mixture into each half of the eggplant and bake like you would a regular meatloaf. A complete meal in one serving depending upon individual appetite.

I think the best recipe is as follows:
Give it a rough dice chop
Toss it into a plastic bag
Through the bag into the trash can
Open a bag of chips and enjoy.

I find it's important to go sparing on the oil. Aubergine soaks up oil like a sponge.
