There was a Good Eats episode where Alton Brown baked eggs. Or was it in his cookbook? I'm not sure. Anyway, he says they taste better that way than from boiling or steaming. You put them right on the middle oven rack, put a pan in the bottom of the oven in case an egg breaks, and then turn on the oven to 325 F (don't preheat, heat with the eggs in it already). Bake for 1/2 hour then ice water bath. Apparently, made this way, they are very difficult to peel. I have never tried this, but I trust Alton.

If you nuke it, be sure and put a hole in the shell or it will explode all over the inside of your microwave. Might do the same in an oven....fun mess to clean up.
