I commonly use any of these 3 - depending on the content of the email. I am presuming you are talking about the opening line for responding to emails.

1. Good morning/afternoon:

2. Sir/Madam:

3. Thank you for your email:

Do you mean open as in open or as in salutation? I would never open an email with a hidden sender, or from someone I do not know, as could contain a virus. However I suspect you mean salutation - if this is to a designated person whose job title you know start with that e.g. Dear Team Leader/Dear Customer Services Officer or you could simply start with To whom it may concern. If you are sending to anyone else then leave out the salutation line and simply start the message, when they reply you will get their details for any follow up,

Don't open it. It may contain a trojan!!! I get these and I always delete them. If they are from someone you know they will ask why you didn't open their email and then you can tell them why.

If I get email at work that doesn't have my name on it I really don't read it. I assume it's a mass email.
If you can't find my name then don't email me.
