I would guess for liability? They've got enough preservatives in them to keep them good, but the extra help of refrigeration makes the company less liable for spoilage. PLUS...they're nice and cold for salads!

Because they are seled in a germ-free package with preservatives. Once it's opened, the bacon bits are susceptible to bacteria. This is the same w/ most canned/bottled foods. Refrigreat only after opening package.

Before they are opened they are in a sterile environment. Once they have been opened air gets in and mold and bacteria are introduced. Refrigerating them slows the growth of the mold and bacteria spores.

because they are in a sealed air tight package when you buy them, and no germs can get in....but once you open the package then air get get at the bacon bits and make them go bad faster
