I didn't know a pro range came in such a narrow width. Are you sure they make one 30" wide?

If they do, most pro stoves require some heat protetion around them to protect walls and cabinets, so be sure and allow room to insulate.

Professional equipment gets hot and stays hot therefore you have two possibilities; see if they make a zero-clearance model or be prepared to have a lot of non combustible material over under ,around, and behind your stove
The reason that pro equipment gets so hot is because it uses a lot more gas which means that the standard home gas line is woefully in adequate for the task, You will have to have a plumber install a larger gas line.
Personally I like stoves on wheels with quick disconnect fittings and big yellow handled shut off valves.
Viking , Wolf, Garland Thermidor all make good stoves ,it's just a question of what you want.
