Any meat goes with any fruit. Had a spell in Hungary and almost every meat dish is served with some sort of fruit on the side. My favourites where duck with cherries (not the glace type) and chicken with peaches. Pork with apple sauce is also a winner but try it with cooked peaches or pears, different but very nice.

Apricot Pork Medallions

1 pound Pork Tenderloin -- sliced into 1-inch slices
1 tablespoon butter
1 teaspoon butter
1/2 cup apricot nectar
2 sliced green onions
1/4 teaspoon dried mustard
1 tablespoon cider vinegar

Flatten tenderloin pieces by cutting them into slices, then pounding them flat between layers of saran wrap.
Melt 1 tablespoon butter over medium-high heat in a large skillet; sauté pork about 2 minutes on each side; remove pork from pan. Add 1 teaspoon butter, nectar, onion, mustard
and vinegar to pan. Cover and simmer 3-4 minutes. Add pork and finish cooking through.

SPICY CHICKEN WITH GREEN PEPPER AND MANGO

Ingredients
1/4 cup olive oil or vegetable oil
2 cloves fresh garlic, crushed
2 pounds chicken breast fillets, skinned
1 cup peeled and diced mangoes
1 green pepper, diced
1/4 cup dark brown sugar
1/4 teaspoon freshly ground cloves
2 teaspoons ground ginger
1/4 teaspoon nutmeg
1 teaspoon soy sauce
Salt and freshly ground pepper to taste


Instructions
Heat the oil in a heavy frying pan. Add the garlic and fry for a few minutes before adding the chicken fillets. After ten minutes add green pepper. a further 10 minutes until the chicken is cooked through. Meanwhile, in a medium-sized bowl, combine the mango with the sugar, cloves, ginger, and nutmeg. Pour the mixture over the cooked fillets and gently mix to cover the chicken pieces. Add soy sauce, salt, and pepper to taste. Cook for about 10 more minutes. Serve hot with rice and green vegetables.

Yield: 4 servings

seared chicken breast and steamed broccoli, put this in a casserole dish with tinned peaches (drain the juice off first of course) Pour some white sauce over and bake in the oven. It sounds gross, but is really good, trust me!!
