Different styles and flavors of cheese are the result of using different species of bacteria and molds, different levels of milk fat, variations in length of aging, differing processing treatments (cheddaring, pulling, brining, mold wash) and different breeds of cows, sheep, or other mammals. Other factors include animal diet and the addition of flavoring agents such as herbs, spices, or wood smoke. Whether the milk is pasteurized may also affect the flavor. The yellow to red coloring of many cheeses is a result of adding annatto.

Different animal milks create different bacteria and different molds grow on some as a result. Some are good, some not so good. We have sheeps milk, goats milk, cow milk each tastes different, each has a different fat content. It is many things... Additives, preservatives, salts and brine... it varies.

Europeans are allowed to consume cheeses and dairy products that are not pasturized. That is pretty much why their cheese, milk and butter is awesome and ours sucks.

Our butter tastes like the wax paper wrapping it comes in...

because they are processed differently and have different settings for them, they also come with herbs from different parts of the world that makes cheese taste so different.

Because different ingredients are used to make them. The provenience country makes a difference too, each one having its own style.
